Well, not eating isn't an option, as that won't help but only hurt. The probability is that you have another sensitivity. Your best move is probably to try identifying what that might be. For a lot of us, it's dairy, so you might want to try eliminating dairy (assuming you haven't already) and see if that leads to further improvement. Or you can go over what...

To be tested, you have to keep eating gluten. It would be better if you went on the gluten-free diet to see if your symptoms improve. If they do, just consider yourself gluten intolerant (or undiagnosed celiac) and get on with your happier life. If not, you'll have to keep investigating. While I don't know if in the strictest sense I've ever had fat malabsorption since I got pretty doughy before quitting gluten, I always felt very queasy when eating anything greasy or oily at all. There are two possible problems from milk, lactose and casein. If your problem is with lactose intolerance, just buy Lactaid pills (or store-brand equivalent). You might also want to get a sleep mask. I completely forgot that I got my sleep mask at the same time that I cut out caffeine. It might well be that the former was more important than the latter. Well, if it's literally stomach trouble then it probably wouldn't be gluten, as the problem is in the small intestine. If you feel a lot of gurgling as if the food is moving really fast through the digestive tract, that could be gluten intolerance or celiac disease. Yes, it sounds like you may well have celiac disease, and you too, cinabunny. Cinabunny, I still have the sour taste in my mouth (entire digestive tract in my case) two years after giving up gluten and thus am giving up dairy in a day or so.
