  1. Sorry to say it but you will commonly come across people like this, and worse. And the, "I know someone who's celiac and he/she says it's okay to eat a little wheat now and then." Or the, "there's no way wheat can be bad for you!" In this day of prescription based medical care, people have a really hard time understanding that diet is the prescription...

  3. I did, for 3 years after going gluten free. Felt fine, thought we were keeping everything separate and that the gluten products in the household weren't affecting me. Learned the hard way.   4. Were you actually tested for celiac disease or just wheat allergy? Although a person with celiac can be allergic to wheat/barley, etc, celiac disease is NOT an allergy.
  5. Got to read those labels. At least Amy's was honest enough to say their products are made in a shared facility. You HAVE to read the fine print, ALWAYS. Gluten-free does not always mean free of cross contamination from gluten. A lot of products make me sad. Ate Sunbutter. Two spoons of this stuff was enough to make myself and another family member...
  6. Butter has milk solids, so YES there is caesin in it. Not much, but it's there. If you want butter without the caesin, look into "clarified butter" (also known as) Ghee.

I don't know of any articles offhand on whether there's a difference between "naturally" occurring and "chemically" added nitrates, but from my own experiences of dealing with a family member who is sensitive to them, it doesn't make any difference. If you have a true sensitivity to nitrates, you will have a much bigger problem with certain vegetables...
  11. I have problems with eggs, but have no allergy to them. I'd like to know if the gliadin is transferred to the egg as well, but cannot find any medical article showing research proving it one way or the other. Interestingly enough, a friend of mine, who is allergic to fish and shellfish, cannot eat eggs if the chickens have been fed fish meal without it...
  12. I eat it for dinner 1-2x a week, and only about a 1/2 cup cooked. I also soak it for 1-2 hours, even though the box says pre-rinsed. Have no problems with it. I did have major problems with quinoa I bought from the bulk-bin, however (likely cc issues). I have read that some people develop a problem with Quinoa, and considering it's a new food to me...
  13. Yes, eggs bother me. My whole gut gets very sick after I eat eggs. I've been tested and I am not allergic to them. Anyone know if chickens fed gluten in the feed transfers the gliadin proteins to the eggs? The eggs I used to buy were from a very small farm, but the farmer did feed them some whole wheat bread.   14. I had a goiter since I was a teenager, which doctors could not explain. Thyroid tests all came back normal, but within 6 months of stopping soy, the goiter is pretty much gone. Shame it wasn't discovered sooner. So yes, I have issues with soy.
  15. Yes. Rice (both brown and white rice) gives me the most terrible migraines, and I was suffering from debilitating headaches non-stop until I finally figured out it was the rice. Even the smallest amount of rice will trigger it, so I cannot consume anything with any rice ingredients. I eat quinoa, potatoes, tapioca, banana and buckwheat for starch.
  16. Our family household has persons w/celiac disease, as well as a child with severe allergy to most nuts, including COCONUT. He's also very sensitive to chemical dish liquids, so run of the mill brands like Dawn have been tried, and are no good. Every "natural" dish soap/liquid I have come across is coconut based or contains gluten. Need help! Please...
  17. Does anyone know if TAMAKI brand rice is Gluten-Free? I know white rice has an added vitamin coating, so trying to find one that is gluten-free (I have read that corn or gluten can be used?), and I have always liked the way Tamaki tastes.
