You are getting gas and bloating from the INULIN. Inulin is also known as "chicory root," "chicory" or FOS. It's being touted as a pre-biotic health food, but it creates a feeding frenzy for bacteria in your gut - both good and bad. Look for a yogurt without INULIN/FOS/CHICORY. -

Once you start the diet the biopsy will not be an accurate method of diagnosing. I would highly advise you push to see a gastroenterologist and get the biopsy done while you are still consuming gluten to have a confirmation of the diagnosis. There are some doctors who will not accept a celiac diagnosis unless confirmed with a biopsy and this may work against... -

I do not know about false positives with the blood test, but as far as I know the biopsy is the only way to be 100% sure. You would need to consult a gastroenterologist. I've had no problems with nightshades. Peppers, eggplant, and potatoes are a regular part of my diet. I eat tomatoes once in a while... don't care for them much unless they're cooked well or made into a sauce. Do you soak your eggplant prior to cooking? -

It is more likely the gastritis is causing your gut to be irritated by fruit. You may just be having a hard time with fruit right now and your gut needs some time to heal.
