Glad you're doing better. One thing I didn't see mentioned was pet food--I've cc'd myself with catfood, so if you have pets, check their food ingredients. Also, things like instant and flavored coffee can be a problem. -

The problem is any stress on the body can increase the risk/severity of celiac. My symptoms actually increased (significantly) when I started a running program (before I went gluten-free). As to why water helps--the water helps flush out the gluten and keeping hydrated would lessen the severity of some symptoms (like diarrhea). -

I also second the thyroid check. Also any other medical conditions or medications that could be causing problems with losing weight. The best thing you can do is to count (accurately) the number of calories you're taking in every day. Being constantly hungry is a sign of being glutened for me (had it before going gluten-free and when I get glutened now.) Yeah, I eat a ton of dairy--no problems with it. I also compared this coffeemate to another that I use regularly (and have no problem with), and they both had sodium caseinate listed, so I don't think it's that. -

I second the recommendation to skip it for now. Give yourself a few months to adjust to the diet and get a handle on it. I'm one of those who reacts violently to anything distilled. You may react to it, you may not, but early on, I'd recommend erring on the side of caution. -

Since you're feeling marginally better, I'd stick with it, but also eliminate everything else you're having problems with for 2-4 more months. First...are you sure you're entirely gluten free? It can lurk anywhere--spices, natural flavors, etc, in the ingredients list. Also, things like barley and rye don't have to be listed on the allergy alerts at the bottom.
