  6. I have mixed feelings on this. On the positive side, lists like these can help newbies find foods that are safe, BUT, lists are fixed in time and product ingredients change all the time. I like companies such as Kraft, Con Agra and Unilever who will always clearly disclose gluten in their ingredient list. I just have to read the label and I know.
  7. Of that long list of ingredients with hard-to-pronounce names, there are very few which contain gluten. Organic foods will have shorter ingredient lists, and higher prices, but are not necessarily less likely to contain gluten. Wheat and barley are grown organically, just like other crops.

  10. Yeah, but many of our customers own cottages well north of Toronto. They go there for the summer and take their pets with them. We get a spike just after LaboUr day when they come back to the city and realize that they left the leash, ball, toy, food, or whatever behind.

  12. While celiac disease is most common in persons of European descent, it is possible for anyone to have it. A formal diagnosis may be useful when dealing with schools who are reluctant to make accommodations. In the US, a diagnosis allows you to force reasonable accommodations under the Americans with Disabilities Act.
  13. I believe that you have incorrect information about the nutrients in corn. While not an abundant source, maize (corn) contains some vitamin E in the form of tocopherol.
  14. Am allergy to wheat, and an intolerance to gluten, are two independent conditions. You can have both, either one by itself, or neither. Most of us here do not, in fact, have an allergy to wheat. You should have your daughter tested for celiac. But, be aware that testing in young children is not as accurate as in teenagers and adults.
  15. Spelt contains gluten. It is not identical to modern wheat, but neither is barley or rye. Celiacs must avoid all forms of gluten, including spelt.

  18. Once of the functions of the villi is to produce lactase, the enzyme needed to digest lactose. If this is the cause of lactose intolerance, then it will likely be resolved once the villi are healed.
  19. I don't know anything about the product in question, but reaction times vary widely. Some of us react immediately, but delayed reactions are common. I take 12 to 24 hours to respond to gluten and then have about a week of visible symptoms.
