  1. Hell no! I did not come home from the endo and make brownies. I actually made them the evening before. But I really didn't feel that badly afterwards except that I thought I would explode! lol I basically just took it easy that day and had more chicken rice soup and a banana before resuming a normal diet on Sat. I didn't want to push it...
  2. Ali, I would agree with ravenwoodglass. Stay on gluten until the bitter end. My endo/biopsy was on April 9 and I continued eating gluten through April 8 (unpleasant as it was and oh so tempting to cut it off a bit early). I have no idea what the biopsy will show, but yesterday (only 3 days gluten free), I felt amazingly well. That has continued through...
  3. Referring back to Elizabeth Barbone's book, all her yeast bread recipes suggest baking to an internal temp of 208
  4. First of all, welcome to the forum! I have gained so much valuable insight here. I'm really interested in this topic, too. I just went gluten free following my endo/biopsy on Fri., April 9. I felt amazingly well yesterday...better than I have felt in months and I wasn't living in the bathroom, which had become my most used room in the house. That...
  5. Daisy, I tend to agree that it might be time for someone else to take over the babysitting for awhile. If it were my family, I think I'd also be very distressed to see loved ones not adhering to a gluten free diet when you know how important it is. If you always take care of the kids at night, this might be a problem but if you can have them during the...
  6. If it would put your mind at ease and if you feel you can afford it, I'd buy an inexpensive set of nonstick cookware to use for gluten free foods. Have you replaced or have duplicates of any other things that might create a problem for your son? (wooden spoons, toaster, separate condiments, etc.) I am getting rid of a mish-mash of old stuff (i.e., ancient...
  7. Bev, I just had my endoscopy/biopsy on Fri. My GI doc diagnosed me with gastritis and duodenitis by visual examination. I need to wait 3 weeks for a follow-up appt. as he will be out of town for two weeks so I won't know the biopsy results until then, even through they'll be available in a week. He did tell me to go gluten free until then. So here...
  8. When I've made muffins in the past (prior to being gluten free), I used an springy ice cream scoop that let's go of the batter. Don't know what the thingie is called. lol I would think that would also work well for cupcakes...no spoons involved
  9. Ooops...I need to learn to read. Didn't see that one of your dinnermates is allergic to chocolate.
  10. I've made this and everyone liked it... Flourless Chocolate Cake with Chocolate Glaze Open Original Shared Link I don't know if you'd have time to make it or not but it is flourless. It is very rich and would serve 10 to 12 (or 16) so it should be cut in very small wedges. The glaze is cloyingly sweet and makes too much
  11. Speaking of Betty Crocker gluten free brownies...I made some for lunch yesterday and added extra chocolate chips and a small pack of pecan chips and my son and daughter-in-law loved them. They do not have celiac and could not tell they were gluten free. I haven't tasted them yet as I made them for lunch yesterday after we got home from my having an endo...
  12. I tried something similar to this called German Pancakes. I did use Bob's Red Mill gluten free AP flour for it (no xanthan gum needed). Open Original Shared Link Very simple recipe and the only change I'd make is to add a dash or two of salt. I dumped all the ingredients in my blender and blended for a very short period of time. I see no reason the...

    ARCHIVED Bread

Today I found an incredibly good loaf of bread (frozen) at my local health food store in Greencastle, PA. It's made by The Grainless Baker and is called Flax Seed Bread. It was expensive at $7.99 a loaf but it is sooo good. I toasted a piece when I got home and just slathered butter on it. Yummy! Open Original Shared Link I figured worse case scenario...
  14. Does your MIL have any health issues? If I ate out five nights a week, I'm sure I'd have a lot of health problems and probably weigh a ton! She should be grateful that you make her son happy, not to mention well-fed with healthy meals at home. There's no excuse for her behavior and the woman obviously has many problems that have nothing to do with you...
  15. You might want to check out this recent thread about Denver restaurants. http://www.celiac.co...-and-more-udis/ I'm hoping to get to Denver this summer to visit my daughter and family and hope to try some of these restaurants.
  16. I need to go through all my misc. plasticware, too...have lots of odds and ends. Lately I've been picking up a lot of new ZipLoc containers in various sizes. I love how they stack in the freezer for soup, rice, pasta sauces, etc. The small ones are just the right size for spaghetti sauce by filling them about 3/4 full to allow room for expansion when frozen...
  17. I'm sorry to hear about your glutening...I'm not yet gluten free but this will definitely be a concern for me as I so want to feel better. My advantage is that I live alone and can do an entire gluten free kitchen. I've had a blast buying some new things as some of mine are pretty ancient. Is there any way that your husband will go completely gluten...
  18. Some people just don't get it and they probably never will!!! Not everything in life is black and white...the older I get, the more I see a lot of gray. And since I'm not yet gluten free (I can't wait to feel better, especially to get rid of the Big D). I have no idea how sensitive I'll be or possibly become once I get this poison out of my body. Or if...
  19. I have found this thread to be really interesting as several of you have experimented with making yeast breads. In Elizabeth Barbone's book Easy Gluten Free Baking, she recommends using a digital instant read thermometer to check the doneness of yeast breads...it should reach an internal temperature of 208
  20. I have already bought a number of things prior to my going gluten free next Fri., April 9 (following endo/biopsy), including my Tupperware colander plus a well-worn set of Tupperware mixing bowls, which I can't believe I'd ever get clean after using them since the 1960's. Also bought a new toaster a couple of days ago. I have a friend who thinks I've completely...
  21. My dog is on Nutro Lite Lamb & Rice (dry dog food) with rice being the only grain. So no problems there. My vet had me switch to that following her chronic ear infections, which he attributed to beef. For treats she gets MilkBone so I'm going to have to be careful about washing my hands after giving those to her (after I go gluten free on April ...

    ARCHIVED Update

Jason, I think I'm safe to say that everyone on here is rooting for you!!! I do hope you get to the bottom of your problems and consistently get to feel better every single day. I can so relate to ignorant people. I just told friends this week (we get together once every week and that involves food) that I am going to do a totally gluten free kitchen...
  23. Ahorsesoul - I've eaten my way through Denver before!!! Thanks, buffetbride, I'll let me daughter know of the places you came up with. I'm sure there are a lot more that she hasn't tried yet...
  24. I'm glad I chose a good book with such favorable reviews. I'm curious...has anyone here tried her yeast bread recipes? I really don't eat that much bread but you can bet your last dollar that when I go gluten free on April 9, that'll be the one thing I crave!
