  4. I've always seen a delay in symptoms as I think the food gets pushed thru your body everytime you eat something. I might even see a good-day where I feel fine followed-up by the bloating / pains / brain-fog / big-D. I also agree that the inflamation lingers even though you are eating gluten-free.   7. I am curious to know if anyone has done the 23andMe genetic testing kit? They sell a kit for $399 which is based on your saliva and can tell you about various diseases and conditions in your genetic makeup. With so many associated conditions / problems that Celiac people have I just wondered if anyone did this and/or learned anything worthwhile...

  11. I make a gluten-free version of Rice Krispy Treats.......Use any gluten-free rice cereal, butter and marshmallows. Melt butter & marshmallows together in a pan and mix-in the cereal. Works well with Rice Chex, too! Cleveland Bob

  16. Depending on how long you went un-diagnosed can / will determine how long before you're feeling consistently better. The damage done in the intestine doesn't heal itself overnight. I visited the guest services office and was given a print-out of all the ingredients for foods made in the minetown area of the park (It was 5-pages long). This helped with my planning for the day.   18. I don't really suffer from neuro symptoms but, I did eliminate soy from my diet as I tested-out severly sensitive to soy. I don't eat chocolate but I do chew wrigley's spearmint and/or peppermint gum when I'm not feeling the greatest and It ususally helps me. In general I try to avoid all soy but I have been known to eat things that have soy lecthin in it...

We have all the usual restaurant chains and some of them around here offer gluten-free menu's (PF Changs on the East Side / Carrabba's on the West Side). Mostly I eat plain burgers, plain steaks...
  22. I order Egg-Beaters as they are usually cooked seperately from the regular breakfast foods (More likely to get them cooked in a clean pan versus regular eggs). Skip the bacon / sausage / hash browns and opt for the fruit. Not much for choices but it beats the alternative of getting sick. Best of Luck Cleveland Bob
