I have worked in Arby's and Mcdonalds. I don't care what their menu says they are NOT safe. Cross contamination is very likely, practically positive. My opinion, pack a lunch it is the safest. - 
	My celiac disease's 2nd grade teacher is having the kids stir and mix a gingerbread cookie recipe in the classroom. I asked for my girl to be removed and I will provide an alternative finished cookie for her to decorate the next day when they decorate theirs. The teacher is trying to keep her in the class during this activity so she does not feel left...

On another note: You do not have to be underweight or below average height to have Celiac's. A good example is my daughter who was diagnosed after nearly 2 yrs constipation problems. She was, and is, in the 98th percentile for wt and ht. In addition to being gluten free she is on a heathy lifestyle program for her high BMI. Being in high percentile... -

I agree ,It's very frustrating. Some people just refuse to believe. Anyone over 55 yrs of age grew up without all these diagnosed allergens around and think it's our generation being overly careful. I swear just because an epi-pen isn't required they think it's not real. I don't know if we can make them see the light, the best we can do is pack all... -

I agree with mushroom, probiotics and easily digestible foods for a while. Are you completely gluten free, because otherwise the pains will continue. Our nutritionist's example was this :A thumbnail full of gluten is enough to cause Villi damage. That includes cross contamination and air particles. I will add when my girl was put on EX-lax her tummy pains... -

My girl was diagnosed at almost 7yrs old. After almost 2 yrs of being treated for severe constipation and compacted stool in her outstretched colon and on Miralax for 1 1/2 yrs of that time she was finally diagnosed with Celiac disease. good luck. Also I wanted to share this : Walmart sells the Envirokids cereals which also make good snacks for $3 a box, which is about $1 less than grocers. BTW Walmart has a small Gluten free section to shop in. Target sells Annies mac and cheese for $1.89 which is also about $1 less a box than grocers. Some Targets have gluten-free grocer sections... -

Hi, Wow what an undertaking, I applaud your enthusiasm. I think if you put up a sign saying gluten-free pie crust taste as good as regular or something to that effect people without Celiac's would buy it as well. My 6 yr old had hers in April. They put them to sleep before they IV them so that makes it super easy on everyone, child especially. Be there in recovery, do not wander around, the procedure is very quick 45 minutes or so. We witnessed a 3 yr old wake up without mom or dad around and he was really scared. For bread: Udi's white bread is exactly light wheat bread. Leave 3 days worth out at a time, keep rest in frig or freezer depending on usage. It's a small loaf and expensive but it's the only bread my girl will eat so I buy it. She also likes the Udi's multigrain but not as much, it is a little denser and smaller. -

another idea Buy natures path gluten free cereal (like vanilla surprise) and Kix cereal, mix them together. This way you get a decent cereal at about $3.25 a box Most gluten-free cereals are much higher in fiber and protein so you can do this and still have a better than most cereal -

Running a gluten-free daycare with 7 kids and not going broke will definitely take some creativity. I am sure as time goes on you will get more and more idea's. Have you tried King Arthurs gluten-free flour yet? The King Arthur cookie mix taste EXACTLY like toll house so it can be done. - 
	The real worry with the mashed potatoes is the sharing of utensils cc from butter is very common. If they use the butter for the rolls then cut of a slice for potatoes ,it would be a small amount but still it happens. I am specifying a new stick must be used for potatoes and nothing else as this year it's at my sisters.

My DD experienced some select memory issues early on , along with it came abrupt anger, crying jags and the inability to calm herself down. It took about 2-3 months after going gluten-free for those things to stop. It still happens if she gets glutened. good luck -

To start with: All wheat, rye and barley based goods. AKA all boxed products that do not say Gluten free, and use only Gluten free sauces and dressings. Wish bone has many salad dressings that say gluten free on them, also San J Tamari sauce, La Choy soy sauce , Bullseye BBQ sauce Chex cereals Use plain spices not combo seasonings... - 
	Hi everyone, My DD has been having tummy problems I believe are gluten related. The only thing out of the ordinary I can think of is pumpkin muffins I made with Market Basket bread and muffin mix. Has any else had problems with this? Of course it could be something else but was wondering if anyone else had reaction.

Dave's grocery mart in Cumberland RI, has ALL the new King Arthur flour AND mixes , AND the gluten-free Bisquick, as well as typical Pamela's, Bob's etc.... I have not been there but my friend called me while shopping there and read off all the items to me.
