ARCHIVED Kids Selling Gluten!
love2travel replied to GlutenFreeManna's topic in Coping with Celiac Disease
Oh, darn it. That would be me. Sorry - I can't seem to help it. But I will try to be a good girl in the future. -
ARCHIVED Kids Selling Gluten!
love2travel replied to GlutenFreeManna's topic in Coping with Celiac Disease
Yes, I do recall that you love baking. I had forgotten that you are at home during the day! Have you seen the pizza recipes I posted a couple of months ago? One is for thin crust the other a chewy crust. So far they are the best I've tried. They do include defatted soy flour, however, which can be detrimental for those who cannot tolerate soy... -
ARCHIVED Kids Selling Gluten!
love2travel replied to GlutenFreeManna's topic in Coping with Celiac Disease
Kinnikinnick is my least favourite commercial crust BUT we found that grilling the pizza really improved the flavour and texture and added the desirable char. I do like Udi's crusts more (but don't love them) as the flavour is more neutral but of course, nothing beats homemade. That is, if you have the time and inclination to do it. As I do not have... -
ARCHIVED What Are You Canning/preserving?
love2travel replied to love2travel's topic in Gluten-Free Recipes & Cooking Tips
I have not done that but when I have tons of onions I make savoury caramelized onion jams that are so incredible with proteins and as starters with crackers and/or cheeses. -
ARCHIVED What Are You Canning/preserving?
love2travel replied to love2travel's topic in Gluten-Free Recipes & Cooking Tips
Canning can be a long process but so worth it. Most of the work is involved in the prep and bringing the canner to a boil. So, while I prep I turn the burner and keep the jars hot in the oven so everything is ready at the same time. It IS true that many vegetables (especially root vegetables) do become sweeter after a frost. NOT potatoes, though,... -

ARCHIVED gluten-free Bread Mixes
love2travel replied to zoogirl's topic in Gluten-Free Recipes & Cooking Tips
So sorry to hear about your mixer and arthritis. I got my KA stand mixer from eBay, saving about $200. Pain is so difficult. I do not have RA but have a host of other things that are debilitating so I empathize with you. -
ARCHIVED Endoscopy Tomorrow!
love2travel replied to alexsami's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I had it done and it was seriously easy. I would rather have an endoscopy than a dentist visit or to be forced to watch football on TV! I had a colonoscopy at the same time and the prep for that was not all that fun but even that wasn't horrid. Make sure to request LOTS of biopsies - at least 8-11 for greater chances of accuracy. Most doctors... -
ARCHIVED Just Diagnosed With Celiac Today
love2travel replied to AmyinTX's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi! You will undoubtedly go through a host of emotions coming to terms with this and just know that is completely normal. It must be reassuring for you to experience success eating gluten free for a few days and feeling better already! That is awesome and shows you are on the right track. You will eventually find a new normal. I was diagnosed with celiac... -

Oh, I hope Nanaimo gets it soon! I was stunned to see it in our store because it is definitely not a large centre at all. -
ARCHIVED Found Glutino's Genius Bread In Canada Today!
love2travel replied to love2travel's topic in Gluten-Free Foods, Products, Shopping & Medications
I'm not a fan of white bread, either, but today when I was shopping I suddenly had a craving! Weird. Anyway, you are right about buying it fresh vs. frozen for dryness. I am also certain I will like the multigrain better as well. Canyon bread sounds good, too. I'm just so pleased that gluten-free products have come such a long way in just a few months... -
ARCHIVED Found Glutino's Genius Bread In Canada Today!
love2travel replied to love2travel's topic in Gluten-Free Foods, Products, Shopping & Medications
Wonderful! Can you imagine if you could have it? Maybe you and I should do a taste test comparison together as we baked the challah bread at nearly the same time. When I was checking the ingredients I noted that the slices of Genius are about 1/3 larger than Udi's (the loaves that I have, anyway, and I know they can fluctuate). -
Me, too. Carrot juice also works nicely instead of water. Sometimes I add lemongrass and/or keffir lime leaves to the water in addition to herbs. Even Parmesan rinds add a lot of flavour (which I did before I eliminated dairy). I never did like fast food and the smell continues to nauseate me!

ARCHIVED Do You Worry About Restaurants That Claim Gluten Free Meals ? M)
love2travel replied to carecare's topic in Parents, Friends and Loved Ones of Celiacs
Although I do not eat out often, when I do I ALWAYS call in advance to speak to the chef about my needs. If I am not satisifed with the answers I do not eat there. I do not think I would ever feel safe eating at a fast food place or chain, though, as they do not have chefs. The higher-end places use far less flour, etc. because sauces are reduced rather... -

ARCHIVED Melatonin Rules For Sleep Issues
love2travel replied to imracin68j's topic in Related Issues & Disorders
Melatonin does absolutely nothing for my insomnia. I've taken the 3, 5 and 10 mg and nil. It is as though I have taken a placebo! But I have serious insomnia which is exacerbated by my severe pain making it very difficult to fall and stay asleep. Thank goodness I have a prescription that works well! Glad it is working for you. Sleep is so incredibly... -
ARCHIVED Found Glutino's Genius Bread In Canada Today!
love2travel posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Having read about Genius bread recently I supposed it would take a couple of years to make it to Canada like most other things but when I saw it in our store today I was stunned. I kid you not - I started tearing up with happiness. Not only are the loaves much larger than Udi's but far cheaper, too. Udi's is $7.99-$8.29 here and Genius was only $4.99.... -
I use many kinds of rice but my favourite AP rice is Jasmine because of the lovely soft and slightly sticky texture (used to make sushi). A very quick way to elevate plain white rice is to add some fresh citrus juice and a coulple of bay leaves to the water. Or boil in coconut milk.

We have no latin market here but our store FINALLY got in poblanos for the first time ever! We usually must buy them in the city three hours away. Only $1 for four? That is four times cheaper than I paid. But I was so excited to see them I just had to do it. We are doing Mexican Thursday and cannot wait. -

Another bad pain day for me so did not get much done in the kitchen. Having the rest of the vichyssoise soup, falafel chips and hummus. Well, at least I made something today! Tomorrow the plan is to have seared duck breast with sour cherry gastrique. -
