  1. Potato, mushroom and red onion frittata.
  2. Vanilla French Toast with my homemade bread and my homemade vanilla extract (with bourbon). Could have been worse! As bread is a rare treat for me, I seriously enjoyed it.
  3. Simply the way you peel and slice the oranges without any skin - they sorta look like mandarin segments only bigger.
  4. Pork Spring Rolls with Sweet and Spicy Chile Dipping Sauce Saucy Korean Shrimp over Vermicelli Baby Greens, Toasted Pecans, Sliced Pear and White Balsamic Orange Vinaigrette Roasted Apples with Vanilla Bean and Cinnamon
  5. Oh, I so wish I could come and take care of you. I'll bet your sweetheart is spoiling you to bits. Please get better soon. And keep those lungs firmly ensconced where they should be!
  6. Lemon and orange Roast Chicken au Jus Roast Baby Potatoes with Fresh Herbs Steamed Broccoli Strawberries with balsamic and pepper
  7. Still have raging insomnia. Wake up at least 25x per night. Mostly due to pain. Benadryl does not make me the least bit sleepy. Ambien is the only thing that allows me about six hours of sleep. Waiting for it to improve so I can be alert!
  8. What are you using it for? If you need to thicken lentil soup, for example, you do not need any flours or starches. Just puree about 1/2 to 3/4 of the soup in a blender. I make tons and tons of great soups and I never need to use a thickener - just pureed veg (i.e. potatoes and leeks in vichyssoise). If you need to thicken a sauce, have you tried using...
  9. Initially my diagnosis shocked and stunned me. I was really thrown for a loop as I was not expecting it. In time, however, it became my new normal which is pretty normal to me. I'm a fabulous cook and have no trouble with that end of things. I am eating better than ever before and have chosen to learn from this. I've learned about tons of kinds of flours...
  10. I kinda know what Marc is saying in a way. Just bear with me. I have had severe back pain for years and it was nearly all I thought about. I became obsessed and allowed it to control me. Not a good place to be. Believe me - I am a researcher to the nth degree, nothing wrong with it. But I took it to extremes. Now I refuse to let it control my life...
  11. It is a moral dilemma for me, too. I LOVE animals. In fact, we are becoming foster "parents" soon. We lost our precious border collie three years ago and we feel it is time for another one to love. I grew up on a farm and saw a lot of butchery (pigs, cattle, sheep...still not sure where my black sheep Ebony went) and all manner of poultry. But I have...
  12. Wonder what tonight's episode will bring??? Am curious about all the new storylines with Daisy and her "father" wanting her to take over the farm, Edith writing for the paper, Bates being released (that can't be over yet), etc. Will Branson fall in love with Edith do you think?
  13. Mango, strawberry and banana smoothie with a touch of almond extract.
  14. Yes. You understand so thoroughly, Irish. I wouldn't even need to explain anything to you. All I would need to say is "Ouch" and you would know. Our husbands are Heaven sent. My favourite time of the day is whenever mine gets home from work or wherever he is. Then he puts everything aside and we lie down and discuss my day. He dislikes talking shop...
  15. Yesterday I mixed up a batch of rub for making jerky today which I am just about to do. I am going housesitting for a few days tomorrow and of course cannot cook out there. So, am making a few snacks to take along that are better choices than pigging out on chips and such like. Tonight am making a bit pot of chile con carne with chipotle and a bit...
  16. You are so sweet. Cooking keeps me sane many days, even if I must break down the recipes into its various components and just do one at a time, rest, do another, rest... Part of it is the fear of losing my passion for things. I do not want to go down that path! So far, so good. I FINALLY slept last night. Most nights I must get up and walk...
  17. Korean Rice Cakes with Shrimp and Peas (am not making the rice cakes from scratch - while I usually love labour-intensive recipes, I just don't have it in me today d/t pain). To me this is the ultimate comfort food. Husband is away, it is snowing (as usual) and I'm hurting all over. But things could always be worse.
  18. Um...I was diagnosed with silent celiac. I was stunned. My villi were completely flattened so I believe I've had it for ages. Nearly two years after my diagnosis, I accidentally ingested gluten and had a severe reaction for the very first time. This happened about a month ago. My doctor treats me as he treats his other celiac patients. I continue to...
  19. See my signature. Severe pain for over 5 years. Have seen all sorts of specialists, physios, massage therapists, had laser, acupuncture and have tried over 15 prescriptions. I lie on the floor to watch tv, lie down in the vehicle etc. The best thing is stretching but many days that is impossible. So, I feel for you. Have you tried muscle relaxants?...
  20. Simply made a bowl of shrimp fried rice crammed with lots of veg. Back is absolutely killing me so that is all I could do.
  21. Our local celiac group discussed this book at our last meeting. I have not read it so cannot comment on it personally but there was not one single person in the group who had anything positive to say about the book. They found it disturbing and do not believe the author is credible. Our dietitian agrees. She said there are too many inaccuracies. Of course...
  22. Oh, Mindwarp, that's a great attitude! Tomorrow is a new day. I am making pasta with a delicious marinara sauce (homemade, of course). Smaller portions than in my previous life (up to yesterday). And a simple baby greens and arugula salad with "candied" pecans caramelized pear vinaigrette. No dessert - we are on a mission to lose this adipose tissue...
  23. You are doing so incredibly well. In fact, you are one of those inspiring me to lose the AT. WE CAN DO THIS!!
  24. Smart girl! We bought them at a farmer's market when in the city over the weekend. They had been kept absolutely perfect in soil and sand in a cellar. They are so pretty on the plate!
  25. Pastry thankfully is one of the easiest things to make gluten free and taste like its counterpart. I find it rolls easier than gluten crust as it does not have that stretch. I make pastry in my food processor which is far faster than kneading it by hand. The last thing you want in pastry crust is to melt the cold butter bits! Handling the dough as little...
