  5. Hi and welcome! Just know that gluten-free bread does not even come close to the gluten version. Sorry, but it is unfortunately true. The first time I made it I cried, spreading it into the pan rather than kneading it. But there are some decent versions out there. You may want to try Kinnickinnik's new soft bread, Udi's or Rudi's.   9. Your husband and I would fight over the jelly, too. I love the stuff. All I do for the glaze is reduce either red or white wine (or even Port) until syrupy (by about 2/3 to 3/4) then add a bit of jelly and fresh thyme. Then just glaze the loaf.   13. In my opinion, roasting the tomatoes first makes an amazingly wonderful difference in the flavour. Slow roasting concentrates the flavour and the natural sugars caramelize.   15. No idea whether I have been glutened since going gluten free 15 months ago or not! My dentist has noticed increased enamel strength (but I didn't). Ongoing chronic insomnia and pain have not changed. Always there, darn it! But much of that is from an accident nearly five years ago. No pattern whatsoever for me!
  16. Chronic conditions forcing you to be bedridden are horrid - I understand how that is. I was bedridden with a back injury and nearly five years later have constant back pain.   21. That would do me in. I do have serious insomnia so I rarely sleep well but I still make myself get up every day at the same time. I just love mornings - they are new and full of promise. And cooler! Oh, in winter when it is -40F I do NOT bundle up for my walks until about noon but I still get up early. Now I've got to put that horrific wintery thought...

I rarely purchase anything processed as I cook and bake everything humanly possible from scratch which is better tasting and better for you. There are, however, a couple of decent breads to try.
