ARCHIVED Is There Any Other Way!?
love2travel replied to Kirstie's topic in Coping with Celiac Disease
Thanks for your kind post! I cannot really say I feel much better physically (a little bit less muscle pain that I have been told is fibromyalgia) but the biggest thing is that I feel better mentally, knowing I am taking care of myself better. You know what? A diagnosis like this also forces you to take inventory of all aspects of your life (at least it... -
Am going to see if I can find Tana French in our library. I have not read her but I would like to! Am glad they are Irish because my favourite books are British - usually written long ago but I am game to her...

Yes - brining makes ALL the difference for chicken breast as it is a dry cut of meat to begin with. Just wait until you experiment with various brines. I have an entire book on just brines. -

Well, you DID mention heat and ice! And stretching gently can apply, too. Not like it used to...gluten-free bread dough doesn't quite behave like gluten dough does. -

Don't worry - I won't forget! I'm planning to start with just walking in water and floating on my back. My PT told me not to do the front crawl but to swim on my back as the front crawl would put me in a bad position for my back/discs, etc. But I'm not doing that until I've walked and floated first. -
Hi, Molly. Sylvia is right. Do a search and you will find lots of lipsmacking great recipes! BTW, is that a REAL puppy? If so, I want it!

Oh, I know. I think I just put on 5 lb reading culinary books today. My pants suddenly got tighter, dang it. Guess what? As I cannot work out at the gym, I am starting swimming next week. I am the only one who can make my muscles stronger so I may as well have at it! -

Yes, you are a very, very skilled and accomplished cook and baker. We cook/bake high-end quality meals/desserts in our homes, don't we? Can you say croquembouche? Dacquoise? I know very well that you do it with love, just as I do. Love for the ingredients, the process, the art and craft and our dear sweet husbands. -
Yes, plus don't forget to take along your own bakeware. When I go to relatives' homes I take along my cutting board, silicone spatulas/spoons, cake or other baking tin; heck, I even take my own ingredients (i.e. gluten-free soy, Worcestershire, flours...). Your SIL may be thrilled to learn more about the attributes of buckwheat or chestnut or almond flours...

ARCHIVED Recipe For Breakfast Cookie/muffin?
love2travel replied to smsm's topic in Gluten-Free Recipes & Cooking Tips
I so agree with this. Whoever brainwashed us into thinking the above is written in stone deserves to have a few wheat kernels placed in his food. We mix it up, too. Sometimes I make egg dishes for dinner and sometimes we may have stir fries for breakfast. We love leftovers at our house. Variety is key. I have so many muffin recipes it... -

IH, this post makes me happy. You are COOKING AGAIN! HOORAY! Osso Bucco and Risotto Milanese are amongst my favourite all-time dishes. As I put my dessert into the oven I felt a twinge of guilt. But I am justifying it by making it for my dear husband who is working such sick hours. He spoils me and I spoil him. -
ARCHIVED A Glutening, I Really Do Know Better.

The first thing that hit me when I read this post was, Oh no! The picking-off-the-croutons-trick. However, as I read your post I began to appreciate your sense of humour. You obviously look on the bright side of things and this translates into less stress which is great. What is done is done. An unfortunate thing happened but you managed to turn it around... -
You're right - it downright sucks at times. Especially at the beginning. It took me several months before I could walk past the bakery section without feeling sorry for myself. Now I truly do not notice it. It honestly can get to that point for you as well. Initially I panicked and bought a whole bunch of gluten-free snacks that in retrospect were unnecessary...

Believe me - I was so shocked when my doctor told me I had celiac that I asked him to make sure the results had my name on the top. Even then I did not believe it. I love food too much to have celiac! And I teach cooking classes! Man, I was NOT impressed. However, that was 15 months ago and about 4 or 5 months into it I realized that it was not as bad... -
....and I neglected to mention fresh markets. When we travel I head to the main square where there are often fresh markets with wonderful produce. We did that nearly daily on our last trip. Great place to learn more about what grows there, food culture and get something delicious to eat as well.

You are most welcome, Dani. Believe me - our first trip since my diagnosis I was terrified! All that worry for nothing. Travel in countries other than Italy may prove to be more difficult, of course. For example, I have not been back to Germany, the UK, Austria, Switzerland, etc. since I was diagnosed 15 months ago. Croatia had its moments (they...

If I have to explain it to them I cannot eat there. Only if they can assure me in their own words (i.e. offer to describe how they handle CC) do I eat there. High-end places train their staff far better than most places. But you are right - there is always a risk. I so rarely eat out other than travel (there are no places safe within a 3-hour radius of...

We have spent each May and October in Europe for several years (we own a house in Croatia). Before that we traveled all over to many countries. We just returned from Italy less than two weeks ago (have been there about 10-12 times now) and it is an incredibly easy place to eat and find food. My biggest concern when traveling to Europe always is the long...
