  2. How wonderful! My husband used to hunt but he hasn't for awhile. We don't have pheasant here (but I get it when I see it on menus elsewhere) and LOVE it. We have a resident pheasant we call Phil at our Croatia house, though. He is gorgeous.
  3. It is so nice not to have to work. I don't work by choice, too. I teach cooking classes and test recipes but that is not work to me! There is a house close by that has an elevator - that would solve potential vacuum problems! However, it is a mansion (actually quite ugly) so they would have central vac everywhere I'd imagine.
  4. That is another classic combination. Has anyone else tried bacon popcorn? Salted caramel bacon ice cream? Wonderful. Or how about candied bacon? All you do is brush bacon with maple syrup and roast in the oven until crispy.

  6. I think he is actually quite a good shot on the wild boar hunting episode he mentioned shooting rabbits. When I was 12 I took Firearm safety and was a very good shot at clay pigeons, etc. However, I have not shot anything for food and as I grow older, I do not think I could actually do it. My heart is just too tender.

  13. It's true - eating gluten free in Italy is easy. This article will come in handy as we travel to Italy twice a year. For those thinking about travel, DO IT!
  14. That's me! I had a very hard time believing I had celiac. I had the doctor double check and had the biopsies just to make sure. It took a lot of convincing! But as soon as those biopsy results came back (after I had a gluten binge - I made up a long list of things I thought I would never have again) I went strictly gluten free once and for all. No cheating...
  15. Oh, for sure. No question. It would be different if I were to have that delicious bread and then die from it, of course, but as we would not die from that one time it would be worth it to me. I'm picturing chewy ciabatta bread sliced very thickly (about a foot if that counts as a slice!).
  16. I would never know if I were glutened (well, I've been gluten free for a year now and am not about to test that theory). When I used to ingest gluten nothing happened at all. But now that I have been gluten free for this long there is no way I am going to check to see! I just keep thinking about the internal damage that would be caused if I were to ingest...

  18. Oh, I'm so glad. That would have been such a shame. The smoked duck sounds divine. Duck is one of my all-time favourite things to eat. EVER. If I see it on a menu I usually order it. That or the lamb or venison or pheasant. The duck fat is the best for frying and I love the crispy skin. Mmmmmm.
  19. It's great to hear you are becoming more assertive! I had to, too. I will never become aggressive but my spine has grown thicker. Get this - it is also very easy to cook just as well at home as eating at most restaurants. However, sometimes you've just got to get out and socialize! Excellent to hear that you are on track with finding hidden gluten...

Sweet and sour, honey garlic, etc. Meatloaf or Shepherd's Pie Chicken wings (hundreds of kinds) Ribs (hundreds of kinds as well) Pulled pork Chicken fingers with a cool dip or dips All the above are easy to make (most in a slow cooker if you want), transport and keep warm.
  22. What an uplifting thing to read! It is awesome that you are feeling so much better. Just imagine how you will feel in another short little year! A year at the time sounds nearly insurmountable but it really is not that long retrospectively. I, too, was diagnosed a year ago. Thanks for sharing - this is encouraging news.

  24. Thanks for the info - I was unaware of this. Thankfully I do not use white rice flour often, anyway, as it is so low in nutritional value and so many flours work better in baking. It is excellent for crispy things such as tempura but often falls flat unless combined with other things when baking.
  25. I always call ahead and speak with the chef or maitre'd. We only eat at high-end restaurants as not only is the food better quality/tasting I feel safer as the chefs and staff are higher calibre and usually very aware. Many of these place do not deep fry or batter things. They also often do not use flour in sauces - there is no need. Some even have gluten...
