LOL Although I think a pill might be a better option, or maybe a dart that could be shot from a safe distance. I have yet to meet a mean person who believed they had a problem so sticking with the diet would be a real problem With the dart option, however, we could all become "snipers for peace"! -

We have a 9 yr old boy and homeschool, too! And we have similar issues...not being able to concentrate, not being able to sit still, etc. It is remarkably worse if he has been glutened! Also, he has angry outbursts if he's been glutened or if he has anything with red food dye. I'm so glad you're seeing positive change already! -

ROTFL about the fantasy reactions! Those are great. It's true, lactose intolerance is very different from gluten reactions. If I've been glutened I get reactions to lactose, too...I spent several years dairy-free before I went gluten-free and it was entirely different. If I'm sensitive to dairy, I might get some bloating and a little D within a few hours... -

Thanks, cassidy. You're right, she knew exactly what she was doing and I do think it was probably part of her problem about where we're going to church. Thanks for the words of support, I am tempted often to fight back with the same sort of thing but all it would do is bring me down to that level. Some days are easier than others -

Ok, so I haven't had the gene test but does anyone know if they know for sure that they've identified all the genes that cause it and how accurate the gene tests are? To clarify, it's hard financially because I am not working (except for teaching the other kids 2x per week) and because there *are* some costs that we wouldn't have if the kids were in public school, even though for us the curriculum is paid for by the state...things like extra paper, art supplies not included in the curriculum, and we also do a lot of extra... -

I second the "Saving Dinner" cookbook...really excellent, yummy, healthy meals and they give you a weekly shopping list with everything you need for the entire week's dinners. I have rarely had to discount a meal in her book due to gluten, almost always you can just change a few ingredients and you're good to go. It really made a difference in our family... -

I usually use plain rice flour, or a mixture of 1/2 rice and 1/2 corn starch or tapioca flour. Either seems to work just fine, in fact I think it thickens up faster than a flour-based roux. A roux with 3 tbsp rice flour, 3 tbsp cream cheese and 1 3/4 cups milk seasoned with salt and some mushroom chuncks makes a reasonable substitute for condensed... -

How long have you been gluten-free? I had breathlessness and dizziness at the peak of my sickness before going off gluten, and it eventually went away. It took a couple of months at least, though. I don't think I was anemic enough to cause those symptoms, they just seemed to be a part of the celiac package as it were. I hope you feel better soon!
