  1. I'm going to try your beef stew idea. I think the other thing that intimidates me is that I'm a very small-volume eater now. I just can't stomach large quantities anymore. So there's no way for me to really enjoy something and have it go away any faster. Also, my fiance has the taste buds of a picky 5-year-old (not an exaggeration - we're actually debating...
  2. The cathedral does have a web site, but it's super-cheesy. It might, however, have a phone number! ... I am ashamed to say that I didn't even think of making an appointment with a priest. I guess I think of them as being above schedules? Or maybe I just didn't think enough. I will contact them.
  3. I feel more like my stomach acid is trying to burn its way through my abdominal wall, but I totally hear you. It's awful. I described "pooping that makes you want to cry, 9 times in 24 hours" to some friends and they didn't quite grasp the concept.
  4. I actually live across the street from a cathedral. But their doors are usually locked unless there's a service or wedding or funeral in process. The trouble is catching the priests! They are busy dudes. I will try, though. I am honestly curious. I only know what I've either picked up or been taught in European History class.
  5. If I offended anybody, I'm sorry. I'm (quite obviously) NOT Catholic. I was just wondering about the transubstantiation thing as an intellectual puzzle. I don't think ANYBODY'S religion is right (the joy of being an atheist) so call me an equal-opportunity disbeliever. But I also respect that everyone gets to have his/her own opinion on the matter. I'm not...
  6. Our tastes really don't match up well. For the most part, I don't want to eat what he considers delicious. It's his major fault, so I'm willing to forgive it. ;-)
  7. What do you usually make for yourself, since you're cooking for one? I am intimidated by the concept of 8 servings of ANYTHING. We don't have that big of a freezer!
  8. YES. I thought you guys were maybe a little weird. Especially if you were cannibals who didn't like gay people ... I mean ... come on! Let he who is without sin blahblahblah. Turns out nobody thinks they literally change over anymore. I think the whole point initially was that people DID think that, and that was part of the protestant reformation. I am...
  9. I have a crockpot. My main problem is that I'm cooking for one. My fiance has no interest in gluten-free eating, and he and I really don't share similar tastes in foods. So that's a no-go. Crockpots and most recipes make SO MUCH FOOD. I seriously can't eat that much, especially since Celiac (my poor, abused stomach).
  10. I was doing a lot better when I was making a lot of steamed veggies and chicken and tofu over quinoa or rice. I just got sick of always having to cook something. I guess I need to get over that.
  11. Oh. I thought the host literally changed and that was the part of the point of differentiating between Catholicism and protestantism. Maybe I am behind the times!
  12. Yeah. I was eating more "pure" foods for a while but I've been studying a lot so I was going for the processed foods for convenience. I will go back to all the cooking. I was afraid I was reacting to the casein at first, but I don't seem to react to all dairy the same. The worst seems to be melted cheese. Everything else is not so bad. (Unless it's a delayed...
  13. That sounds like it could be a skin reaction to gluten, sure. I think there's some variation when it comes to the skin manifestations. Other people in the forum probably have more experience with this so hopefully they'll jump in too. I guess we'll know for sure when you cut out gluten and see what gets better and what doesn't!
  14. Newly diagnosed Celiac, still working out what other intolerances I have. The most recent theory was lactose intolerance, so I started taking lactaid (checked the bottle - the pills are gluten-free). Yesterday and today I had sausages (gluten-free both by ingredients and as marked on the packaging, not made on shared equipment or in a shared facility)...
  15. Right ... but if the bread/rice/whatever turns literally into the body of Jesus Christ, shouldn't it BECOME gluten-free because human flesh (like bacon or poultry or steak) would be gluten-free? That's really the question. How do people resolve the idea that it still triggers Celiac even though it's supposed to be Jesus's body? Does it bother anybody? Does...
  16. I'll keep my fingers crossed for you that the tests work and you're properly positive or negative. Be your own advocate with your GP, because she's the one who will be able to order more testing if you need it. Sounds like the dietitian is a good resource, but he lacks the critical MD that allows you to make things happen. If the bloodwork comes back negative...
  17. OK, here's something I totally don't get. I don't mean to be facetious or disrespectful - I'm just very very very curious. In Catholicism, the wafer/bread/communion thingy turns into the literal body of Christ (transubstantiation). It's an official part of Catholicism. That that is what happens. So then why isn't the literal body of Jesus Christ gluten...
  18. I understand how frustrating it is. I was in the same boat just a month and a half ago ... pain in the butt! Are you scheduled for another endoscopy or colonoscopy? If you've already had the blood drawn and you're not scheduled for another diagnostic procedure, there shouldn't be a problem with going gluten-free because you've already done the work to try...
  19. The risk of malignancy isn't that much higher with Celiac. It's much worse with diseases like Crohn's or Ulcerative Colitis (the so-called Inflammatory Bowel Diseases). People with Celiac can live long, happy, healthy lives as long as they don't take in gluten (and if the person has other food intolerances, those get added to the no-no list). Celiac is...
  20. I think I'm angrier with gluten for sneaking into so many places where it doesn't belong. Like soy sauce. But then again, I haven't healed my guts yet.
  21. I had no idea that blog was gluten-free! I used to like her recipes even before I went gluten-free. I just knew they tasted good. No wonder they seemed so awesome - they didn't make me sick!
  22. Hi there! Welcome! You're lucky your husband eats what you eat. I'm cooking for one, and that is a pain in the butt sometimes.
  23. The erythema just means redness (increased blood flow - likely inflammation). The terminal ileum is one of the parts of the gut that can be affected by Celiac, but seeing erythema doesn't mean that you have Celiac disease. If you can get your antibodies tested before you go gluten-free, get the blood draw done and then drop the gluten out of your diet. The...
  24. Make sure the party rep understands what gluten-free is, but then go! Have fun! Bring some food for yourself just in case.
  25. I've been diagnosed for only a month but I've been finding it easier and easier every day. The easiest thing I've found is to focus on what you CAN eat instead of what you CAN'T. It takes a lot of cooking, but even with just a toaster oven, microwave, and rice cooker you can make a lot of different things that will be gluten-free. You can totally do this...
