  1. Westiepaws, I am a firm believer in the Atkins diet but have found that most people who say they are "doing Atkins" have never read the book and have no clue as to what is really involved. They think that all you have to do is eat a side of beef everyday and you'll be fine. WRONG! That is not what it is about at all. This same ignorance gets applied to celiac...
  2. For me it was a huge relief to finally know what was wrong. I was sick for 36 years and had no idea why. It took a lot of work in the beginning to get into the habit of gluten free eating but it isn't as hard as it first appears. It just takes some time and practice and we are always here to help. It is not the end of the world. I like to think of it as a...
  3. Being healthy is my reward most of the time. Since I finally know what it is like to be healthy I embrace each day like the gift from God that it truly is. But every once in a while a nice glass of merlot and a good steak is like icing on the cake.
  4. I wish you well. I've enjoyed your posts and let us know how you are doing as soon as you can.
  5. Some people just can't accept that a food that billions of people eat every day can cause so much damage. This may be the case with your mother. i would talk directly with your father. since he is the one with health problems he might be more open minded.
  6. Chocolate chip cookie dough, raw eggs and all, is probably the only gluten containing thing I sort of miss.
  7. The private universities like University of Phoenix and many others understand that there are people out there who just don't respond to traditional educational methods. They prefer to have students who have had success in the real world and their academic track record is secondary. Siena Heights University is another good one and I've applied for grad school...
  8. Cream of buckwheat is really good.
  9. Lyme disease would be enough to trigger the symptoms of gluten intolerance. Having the fog lift in my brain was such a wonderful feeling. Getting nailed with gluten is unavoidable at times.
  10. My son will eat junk food but he much prefers fresh fruits and vegetables. Broccoli is his favorite believe it or not. The sooner you start your kids on healthy foods the more likely they will develop good eating habits.
  11. It just depends on how badly you want to be healthy. The few moments of pleasure you get from cheating is not worth the long term health problems you most certainly will suffer. Eating gluten when you are angry or upset to get at somebody else does them no harm but it does harm you.
  12. I have never had a problem with pure buckwheat and eat it nearly everyday. Buckwheat flour usually has wheat flour added because the gluten is what makes it stick together.
  13. Every one responds differently. Some people take longer to heal than others. I would have to put myself into the group of people who call the gluten free diet a miracle. I didn't heal overnight either. My life is now the polar opposite of what it was. Keep at it, it will get better.
  14. Well said Nadia. We just can't afford to sacrifice our health for the sake of convenience. It really doesn't take as much effort as some like to believe to maintain a healthy diet. Time management skills are something you are just going to have to discipline yourself to have. The few minutes you save eating glutenized processed crap is not worth it. The two...
  15. I've never asked for information at the corporate level but because I have to travel I don't always have a choice. At the individual restaurant level I have very few bad experiences. The corporate chain restaurant wait staff and managers have always done what I've requested and have been able to answer my questions. There may be reason why the corporate office...
  16. If after eating breads and pastas you start experiencing these symptoms it is a good sign that somethings not right. All of your symptoms are the most common ones for celiac.
  17. I've only eaten at Applebees a few times and never had any problems. Any of the corporate chain restaurants like Applebee's, Chilis, TGIFridays usually have something gluten-free and have usually worked with my requests. To hide and refuse to get out there is the wrong attitude. It is up to all of us to make others aware of celiac and other food intolerances...
  18. I have been in your daughters shoes but at least she is getting some help. I was dumped into sped classes and got no help at all when I was her age. But there is hope. I will get my Bachelors degree (4.0 GPA too! ) soon and have applied for graduate school (MBA). About 85% of the classes were in the accelerated online format (University of Phoenix)...
  19. For me I just stay away from processed foods. I prefer to eat simply prepared meat, veggies, fruit, nuts, buckwheat, millet, quinoa, cheese and yogurt. This lifestyle seems overwhelming at first but once you get the hang of it you won't think much about it.
  20. Most doctors are idiots when it comes to this disease. I was not anemic, I was very overweight before I found out what the problem was. I don't experience pain but whenever I get glutened I don't always get the same reaction. I usually feel fatigue and brain fog but the last time my guts were churning a bit. I have found so many new and better foods to...
  21. I have to travel frequently and have found Denny's to be accommodating. I stick with their salads mostly and they are usually willing to accomodate any special requests. TGIFridays and Chilis have some low carb menus that I have never had any problems with.
  22. That gives you a good 18 months to get your campaign going before the 2006 elections.
  23. I stay away from rice because it is starchy and I get gassy and bloated from it.
  24. Stranger things have happened. 18 for the House, 30 for the Senate and 35 for president along with being a natural born citizen. You don't have to be a natural born citizen for the House and Senate but I don't remeber how many years you have to be a naturalized citizen before you can run. Those are the only restrictions so Celiacs can run for office...
  25. I can't tolerate real starchy veggies like potatoes. Don't think it's a nightshade intolerance because I eat tomatoes nearly everyday. I also can't eat fruits high in fructose like bannanas or tree fruits. I can't eat much sugar either. Milk tends to cause gas but I don't have any problems with cheese or yogurt. Sulfites cause gas too. I think it may be due...
