  1. I am making this for the first time ever right now! It turned out pretty thick when I followed the directions, is that how it should be or should I have added more liquid? I grew up in OK on Shawnee white cornbread (not sweet). Not sure if it's gluten free but I doubt it. -I can't get it up here in Alaska anyway.
  2. Those are my favorite cookies! I was just looking for gluten free quick cooking oats. All the store had was the thick cut oats from Bob's Red Mill. If I put them in the food processer a bit will that work? (crossing fingers!)
  3. I don't rinse. Pretty much the only rice I use is Tsurumai Brown Rice, usually in the asian food section. Even my 8 year old picky eater loves this rice, I can't recommend it enough. : ) I put it in chili, in soup, eat plain etc.
  4. I am new to the gluten free world but in general... Those "office gifts" that people share...yes I have gotten my share of those and I am sure given them too, LOL. And yes it's annoying when it appears the gift has no thought in it whatsoever...but please remember they didn't have to get you anything. I just thank them and smile and remember it's the...
  5. I am still new to all this and have been reading lots and learning. I saw a chart recently with the incidence of Celiac in different countries. I just wanted to point out that if their wheat is indeed so very different, why then does Ireland (I remember being mentioned on the graph specifically) have a very high population with celiac? And not to mention...
  6. Hi TooManyHats! Your story sounds like mine only I have to wait till end of January to get my endo. (and they didn't ask me about Irish although I am part) Let us know how it goes, Best wishes,
  7. Smile, say thank you and regift it. : ) Or give it to your family who can eat it.
  8. Where can I get more info on the flour mix and her e-books? Sounds interesting, Thank you, Amy in alaska
  9. Sorry about all your baking problems! I just made cupcakes with a gluten-free betty crocker devils food cake mix. While reading reviews at amazon I saw one poster mentioned not to follow the directions on the box and to add 1 package instant choc pudding mix, 4 eggs, 1/2 cup veg oil and 1 1/4 cup cola and bake at 350. I meant to try it out today on my cupcakes...
  10. I realize this is an old thread but had to comment. Went to Fred Meyers yesterday and wanted to buy a rotisserie chicken and every flavor has wheat in them. I was so bummed. I am roasting my own chicken in the oven now as I type and it smells so good. : ) Only other grocery store nearby is Walmart. Haven't looked at theirs but usually I don't like the...
  11. I just was diagnosed and waiting on my biopsy so I can't answer about pain lessoning. (I am hoping the answer is yes for both of us!) If you are in that much pain I would consider taking a break (or cutting back) but I know I would have a hard time taking a long break...I do jujutsu, battojutsu and ice hockey and they are my sanity savers. Can you call your...
  12. Thank you for all the tips and ideas on feeding the rest of my family and me. I was just looking online at the gluten free pastas and got all excited till I noticed...they won't ship here to Alaska! I just bought a breadmachine (to make my own gluten free bread) from amazon for goodness sakes and got free shipping on it to Alaska, why won't they ship 1...
  13. Cocoa Pebbles and 2% milk (I saw where cocoa pebbles is listed as gluten free and then saw where it was suspect, can anyone tell me if it's ok?) Diet coke little cutie orange very small apple miss meringues mini butterfinger Lunch was the Christmas potluck at work. I blew it knowing this was my last potluck like this. Turkey with gravy ham couple...
  14. I called directly to the Gastro Doc's office today and spoke with someone about getting an appointment possibly before Christmas. The lady promised to call me back in 20 minutes and then never did. I waited an hour and a half to call back and then no one remembered talking to me and of course I didn't know the name. So I explain all over again and he checks...
  15. Hi there! I experience something similiar. It feels like my guts are being squeezed and stomped on, sometimes I have sharp pains as well. I have had bloodwork that my doc told me indicates I have celiacs and I go for an endo and biopsy but they can't get me in till Jan. 15. It's killing me to wait that long and I have to continue eating gluten of course...
  16. Me too, LOL! But it's not about judging, just sharing. : ) I am bummed because I was repacking my lunch this morning and I forgot to put my 2 cuties and an apple back in! Here is the plan: 12/16/10 breakfast Honey nut chex and 2% milk Miss merengues (or however you spell it) Diet coke snack fage yogurt 2% strawberry babybell cheese...
  17. Welcome and I am praying for you KaelinG! You are not alone, I am new here and new to celiacs (very new!) but there are many people here who can offer lots of great advice and a shoulder to cry on when needed. Amy in Alaska
  18. I don't know if this is the right section to ask this in but I have been on weight watchers online before and they have threads where folks will post what they had at each meal. I would love to see something like that here if possible? (is it here and I am not seeing it?) This would be great to get ideas about what to have for different meals and snacks...
  19. Hi Heather, actually that's the deal my hubby and I have, I do bathrooms and he does kitchen and dishes. Although how it normally works is I do both a lot, LOL.
  20. Denise, Congratulations, it sounds like you are doing well! Especially on giving up coffee. : ) I am not a coffee drinker but am curious, did the nutrionist mention soda at all? I am huge diet coke fan. I just had my blood work done a few weeks ago and found out Friday it's most likely celiac (not my gallbladder like I thought it was). I have...
  21. oops forgot to add the normal range was <10 on the first test. I was 100.
  22. Thank you Ada for the reply! I have to wait till middle of January to get my endo and biospy done! On the one hand I am happy I can eat normally during the holidays but on the other, it hurts! I did go buy a few gluten free items at natural pantry last night...and I thought I would start out trying a few different things since I don't have to be...
  23. Does it mean Been there done that? Hi cassP, welcome, I am new here to so I can't answer many of your questions. I just had to say though... if celiacs could get me out of doing dishes due to cross contmination issues, that might be worth having to eat gluten free for the rest of my life, LOL! I hate doing dishes! Amy in Alaska
  24. Hi Loey, we just got back from the wedding and they actually had some gluten free items as one of the young girls has to eat gluten free. So I got to try a cupcake and it was very good. (as for twinkies touching my lips mentioned above, previosly it was all things in moderation, not a twinkie for all, LOL so same will go for gluten free cupcakes; I only had...
  25. I called today and got the actual bloodwork results sent to me. What does it all mean? I still have to wait for the referall call which I hope they call tomorrow...
