  1. I'm wondering if I should do this, and if I do, how do I go about doing it? I mean, should I just take a little bite of wheat bread and continue on with my gluten-free diet to challenge it? It would give me some idea as to my sensitivity if I only have a little bit. Or should I go whole hog and eat gads of gluten-filled foods? I don't want to choose foods...
  2. Thanks! I really needed a cookbook recommendation! The Guten-Free Girl and the Chef is just not up our alley. I stick to easy-to-prepare family recipes. No one in this house is going to cook "fine" meals of leg of lamb, duck, or even any fish. I will go out and buy that!
  3. I have some dishes that I'd hate to give up - things that call for flour as a thickener. What do you use for a replacement? I know there's a gluten-free "all purpose" flour out there, but wasn't sure if it was any good. I'm thinking I can just use potato flakes for my potato soup recipe? What do you all use for your scalloped potatoes, mac n cheese, stews...
  4. I am also VERY lucky to have a dietitian that not only specializes in celiac diets, but has also been diagnosed with celiac himself. He's been gluten-free for years.   5. Yes, I am very lucky to have a caring doc here in Pittsburgh. Don't worry. I'm going on the diet - the weekend of March 5th (I see the dietitian on the 3rd). It gives me a few weeks. Plus, I'm waiting on the kids' test results. Though, it's that weekend for me regardless of where the kids are with their testing. I'm currently going through all my recipes...

  11. I was diagnosed with crohns almost 20 years ago. It's not active, but they still require routine colonoscopies and endoscopies. This was sort of a fluke finding. I've had an endoscopy about 3 years ago and never heard anything about results suggesting celiac. I don't know if the celiac is a new development and independent of all my other autoimmune problems...

You all have your own personal experiences as well as the experiences of others from this forum.   16. My analytical side just can't be satiated. I'm a numbers kind of gal, and I really hate the idea of "try it and see." It is most certainly daunting - and costly. I just want to have a REALLY good reason to do this diet and the numbers are not convincing to me. I wouldn't even call them borderline at this point.   17. I had an endoscopy done about a month ago as a routine test for my Crohns disease. Biopsies of the duodenum came back suggestive of celiac. Blunted villi, along with other stuff.
