  1. Well, one craving is gone. I just ate half a package of Kinni-Toos (gluten-free oreos). I feel a bit better now. And, really, I could eat the rest of the package. Nevertheless, I sure would like to sink my teeth into some gluten-filled stuff!
  2. I haven't tried angel food cake because I can't even make a decent pie crust, tollhouse chocolate chip cookie or cake using Better Batter Flour, which cost an arm and leg and came highly recommended. I'm sick of using an expensive flour only to come up with a subpar end product. I'm still fairly new to the gluten-free diet, so my standards are still high...
  3. Am I the only one that hasn't had any luck with this flour? I've made pie crust, Tollhouse chocolate chip cookies, and Hershey's chocolate cake. All were subpar.
  4. Have you ever eaten something and then (almost immediately) realize that it had gluten in it? I've taken great care to make sure that I'm not eating gluten. The one time I did accidentally ingest it, I didn't figure out what had happened until about 3 days after the fact. I am seriously missing pizza, angelfood cake, and dinner rolls. I have these...
  5. I hate the idea of using shortening because, for me, (particularly with choco chip cookies) eating the raw dough is MOST of the fun of making the cookies. And, I just can't see myself eating raw dough made with shortening. I only use butter.
  6. I would LOVE some more info on this. I used the Tollhouse recipe and used Better Batter as a replacement, but the cookies turned out FLAT and chewy. Gross. I wouldn't eat them. I like a crunchy cookie with some substance. Not a chewy cracker thin thing.
  7. We are going to be taking a trip this summer and I'm sort of panicked about where we are going to eat. It's going to be a camping trip, and it will take us two days to get to the site. So, there will be food in the car for the camping and likely some for the trip there as well, but nothing will be good anymore on our return trip. So, what are my choices...

  9. Some sources say it's not a guarantee, while others say it's gluten-free. It's not listed in my "Gluten-Free Grocery Shopping Guide 2011/2012 Edition," but it's listed as safe in the glutenfreedrugs.com list. So, which is it??? I see that it lists gelatinized starch as an ingredient.
  10. I'm hoping that I can just sub better batter flour or King Arthur or Tom Sawyer flour for all my holiday cookie baking. Time will tell. Eventually, I'll make some cookies. Just haven't tried it yet.
  11. From what I've been reading from other people's experiences, it seems that Bob's Red Mill All Purpose seems to have a bad taste in baked goods. I used it for my homemade macaroni and cheese, and everyone LOVED it. It's the most fattening recipe for mac and cheese that exists, and I think the cheese completely masks any flavor that the flour might give....

  14. I did, but my diagnosis was backwards: I had the biopsy done first as part of monitoring of another disease. Just so happened to find this one. Not sure about the statistics on your question. I know a lot of people don't have a positive biopsy or biopsy at all, but don't know if it's the majority or not.

Just to follow up: I contacted Better Batter and they think that the oven temp was too high (causing the outside to cook faster than the inside and making it seem like it was baked through when it wasn't). One of the signs of this was the fact that one of the cake rounds collapsed a bit in the center. So, next time I try this, I'll set the oven a bit lower...
  16. I definitely spoon it in. I wonder if I should have baked it longer. The toothpick came out clean, but one of the 9-inch rounds collapsed a bit in the middle. That leaves me to think that maybe it's not fully baked because that's exactly what the texture is like - a not fully baked cake-brownie.
  17. Yes, it does. It's a bummer because that flour is really expensive!! I can't afford to make baking mistakes, or learn by trial and error.
  18. I made the Hershey's Chocolate Cake with the Better Batter and it tasted GREAT, but the texture wasn't quite right. It was a cross between a cake and brownie. Sort of mushy and not cake-like. Not sure how to improve that. It is very moist - just not the texture I particularly wanted.

  20. I think celiac "defines" you only if you let it. But I think there is a difference in being overwhelmed and sometimes consumed by it and being DEFINED by it.   22. I've had this cake and it's VERY yummy. I particularly like the ease in making it! I find it to be best served with vanilla icecream and homemade whipped cream. It takes the edge off the rich chocolate, because it is VERY RICH!.
  23. Have they checked you for mono? The rheumatologist will likely have you get a number of blood tests. Might feel like they should just get a pint instead of filling up 13 vials!
