  1. Actually had someone write on my wall that they don't believe in all or nothing and that you should do everything in moderation. That is, eating gluten in moderation should be fine. She also implied that there is a celiac DEBATE in that some are passionate in their belief that all gluten must be eliminated, but that she believes that everything in moderation...
  2. Oh, and I have made an appt to discuss this very thing with my gastroenterologist. I think he might ask me how I'm doing, and I will be telling him the truth. AND, I will try to tell him in the very nicest of ways that he can take this diet and shove it where the sun don't shine.
  3. I don't know, but I'll be the first one to use that defense. I don't really get that from my friends. It's the happy celiacs that get to me. No offense to any of you happy folks. Some of my friends have told me, "Damn. I'm sorry. That's gotta suck." And I feel validated and tell them, "yes, it does. it sucks a lot." And I totally understand why...
  4. This is my Go-To pizza crust. We have it about once a week and the whole family likes it. I'd say it's as good as an average frozen pizza (not the self-rising kind they have now) from the freezer section. Very similar to Patty's posted recipe on the first page. Open Original Shared Link I double the recipe and add parmesan cheese to the dough....
  5. Thank you for posting this!!! I can't wait to try it!! I'm SO EXCITED!! To actually be able to have a SANDWICH?! I'm beside myself at the mere thought. And, I have a coupon for Whole Foods. Looks like I'll be buying some King Arthur!
  6. I'm always cold. Been that way for years. Even after gluten-free, I'm still cold. The only thing that seems to change my cold tolerance is increasing my thyroid med dose.
  7. That's actually quite interesting. It's ragweed season up here and normally (even with shots) I'm completely miserable, but I'm not having any more of a problem than a slightly runny nose. I don't know if the pollen isn't that bad or what. I thought it had more to do with the shots and my allergy meds, but maybe I'm wrong. I have tried going off the allergy...
  8. Oh, No! Not 17 scripts, 17 pills. Actually it LOOKS worse than it is. I have 4 scripts: Rx fish oil (2 pills, 2x daily - supposed to provide anti-inflammatory effects), something to keep crohns in check (3 pills 2x daily), and another for my liver disease (2 pills 2x daily - although there are no studies to prove that it actually provides any true benefits...
  9. I have been waffling about seeing a therapist and maybe even the antidepressants. I hate the idea of adding more drugs to what I already take (17 total daily). Plus, depression is one of the big indicators for me that something is amiss (either thyroid or getting glutened), so masking it may be masking a valid medical issue. I would qualify myself...
  10. Man, I miss bread. I miss bread something fierce. And, that's the rub. If I had a day to binge, I would first go to Golden Corral and get salad and their dinner rolls. Mostly, the dinner rolls. That would be my meal: soft, buttery dinner rolls that practically melt in your mouth. Really, above all else, THAT is what I think about. BREAD. Yeasty yummy...
  11. Love the idea. I just got my first tatt last year for my 40th birthday. I LOVE it. It's on the inside of my forearm. It's a very meaningful tattoo to me. I'm planning on getting another very soon. As for the old and wrinkly. If we're lucky, we'll all get to that point. I had given up hope in ever reaching a point of getting old and wrinkly, so...
  12. ^WSS! I'm so sorry that you are having an even more rough time than I am. I hope things will change once you start to feel better. I know that I have had suicidal-ish thoughts when I got myself accidentally glutened. It can really do a number on you - both mentally and physically. I wish I had more positive things to say about it, but I'm obviously...
  13. And... I'll probably need to be reminded of it again. Maybe I should print it out and post it in my kitchen.
  14. THIS might be the best thing you could have said. I know it sounds really obvious, but I never really thought of it this way.
  15. I can't freakin' stand this diet. I hate it. And I feel like acting like my 7-year-old and having a magnificent temper tantrum filled with stomping, crying, screaming, and door slamming. I figured that by the 6 month mark, I'd be more used to it, but instead, I have an even greater desire to just say, "Eff it. I'm going to eat that damn dinner roll," which...
  16. I miss: Warm soft dinner rolls (especially the ones from Golden Corral) Homemade bread Homemade cinnamon rolls (I just found the perfect recipe and made The Most Awesome Cinnamon Rolls Ever last Christmas and then was told I had celiac) Making all my favorite holiday cookies (I'm not sure I can reproduce some of them) Did I mention warm soft...
  17. The biopsy doesn't lie in that it says there's villous atrophy when there isn't, but the cause doesn't necessarily have to be celiac. The probability is that it IS celiac, but it could also be due to soy or dairy intolerance, lymphoma, intestinal cancer, crohns, or the things mentioned above. I would say that if there's been no improvement in a follow-up...
  18. I think this diet can be less traumatic for people with more versatile tastes. The only food that I have found that I would consider better than any other gluten-containing food would be steak. I'm a steak and potatoes kind-of-gal. I veer more toward a Southern Style food. I don't *do* spring rolls or sushi. My most "exotic" dish is Feta Chicken Bake...
  19. Yes, it is! I'm 6 months in and STILL there. I don't even CARE if I don't get any more invitations! Honestly, that would just be one less thing for me to worry about, and one less thing for me to finagle my way out of. I hear it gets easier and we'll stop living to eat and start eating to live. My SIL has been on a gluten-free diet for years now...
  20. I usually go to places that at least have a gluten-free menu available. I just had breakfast at Eat and Park. They have a gluten-free menu. I talked to the server about the fact that I have celiac, so that usually clues them in to treat my food differently. She offered to give me a gluten-free bun in place of the toast. I told her it couldn't be toasted...
  21. I feel your pain, Sista!! Right there with you!! I've bowed out of many a picnic and gatherings this year due to the same thing. I'll be gluten-free for 6 months in just 4 days. Nope, not counting the days over here...
  22. Have you had your thyroid checked? How about your blood tests? Are you lacking in any vitamins or nutrients? Wondering if there is some other underlying cause/disease/condition. Sorry I can't help you further. I have not had your symptoms and cannot give you any first-hand experience.
  23. Don't feel stupid. I recently put THREE slices of Udi's bread (and you KNOW how expensive that is!) into the toaster when my DH asked me, "What are you doing?" And, I'm like, "Toasting my bread." DUH! And he's like, "um, shouldn't you be using the other toaster?" I had to throw them out. Freakin' A!! Had it not been for him, I would have glutened...
  24. Truth? I don't know. And I can't say that anyone truly knows. The tests aren't perfect - no test is. You *could* have celiac and have biopsy results showing absolutely nothing. My story: All tests negative except the IgG gliadin, which was just one point above negative. This was done AFTER I had a positive biopsy. And, guess what, I could, technically...
  25. I don't know if I'm just not that sensitive or I've been really good at this gluten-free thing, but I was glutened once 3 weeks after I started the diet and haven't been glutened since. I'm approaching 6 months of gluten-free living (Sept. 9th). We generally don't eat out, but when I do, I'm very clear about my needs and typically go to restaurants...
