  1. Great color analogy, Mushroom! So sorry about your crappy doc. I've had crappy docs myself and am so glad I'm not dealing with them anymore. If you are my doc, you need to leave your ego at the door, or you'll be seeing my back as I walk out of it!
  2. I think it's difficult for the average person to get a grasp on the whole thing. My SIL, who has celiac, explained it to me at least twice, and I still didn't think about how serious cross-contamination was. Heck, I didn't really understand it until weeks into the research once I was diagnosed with it. It's hard to imagine such a small amount having...
  3. It is correct, but I think most people that have questions like that are fairly new to the disease and trying to figure it all out. Like me, I'm still in the "bartering" stage, I guess. I don't have much in the way of outward symptoms that I know of. I guess fatigue could be one of them, but after 2.5 weeks gluten-free, I've noticed no change in that...
  4. I'm guessing everyone is different. It seems the gut issues resolve more quickly than the neuro issues, fatigue, and brain fog. I've only been on the diet for 2.5 weeks and I don't notice any difference whatsoever. HOWEVER, I didn't have any real symptoms to begin with. My primary complaint has been, and still is, fatigue.
  5. I'm so glad you liked it, and it helped you as much as it helped me! It really made sense to me and helped me be at ease with my inconclusive bloodwork, and made me think about the connection of this gluten thing to all my other autoimmune diseases. I'm not sure where you can get the book - I'm assuming (Company Name Removed - They Spammed This...
  6. The only thing I've tried was the strawberry cake recipe, but made cupcakes instead. They are wonderful!! Even after freezing and thawing, they are still great! They are BEST out of the oven, but they retain their moisture well. I can't wait to try more of her recipes!! I bought this book and the Annalise Roberts book, so I think I'm set for baking...
  7. Yes, it does! Thanks for the info! That is so strange that your first huge glutening caused no ill effects, but then you got symptoms on accidental ones after that! I've been going along with your original mindset about planned cheats because I don't think I'll have any outward symptoms and am thinking a cheat every once in a while will damage the...
  8. I'm trying one last time to get an answer to this question, since a couple of us newbies would like to know. I think I've been very strict about my GFD, and am wondering if I'll ever know when I've been glutened. At what point can I assume that I might have silent celiac?
  9. You are so lucky to have such wonderful and supportive parents!!
  10. I'm not as worried about the chocolate chip cookies as I am about the DOUGH. I LOVE tollhouse chocolate chip cookie dough and more often than not, I make them to eat the dough - the cookies are really just a by-product of my craving. Unfortunately, I have these cookies that I absolutely adore (sandtarts). So much work goes into them that I just cannot...
  11. I'm assuming you are looking for positive stories from veterans?
  12. Love2Travel: Would LOVE to have some of the great recipes you've managed to conjure up! I'm looking for an awesome cinnamon roll recipe. I don't know anything about baking, except to follow a recipe. I had finally found an awesome recipe, and now cannot use it. I loved making things from scratch, but without wheat, I don't even know where to start...
  13. Someone mentioned using Pamela's pancake mix for Tollhouse chocolate chip cookies. She said they turned out great. Haven't tried it myself yet.
  14. I'm assuming the paperwork has more to do with child visitation than divorce proceedings. I'm so so sorry!! I really don't know what else to say. I can't imagine losing my mate and my kids.
  15. Oh! I'll have to try that too! These were still fine after 24 hours. Just turned a little more dense like a muffin, but the moisture was still there. I'll have to wait and see how they are after defrosting from the freezer.
  16. I'm bumping this up to see if there's anyone else who has anything to add. I'll soon be 2 weeks gluten-free, and I have had no signs of being glutened. That could be because it's too soon to tell, I haven't been glutened yet, or I have silent celiac. I'm wondering if there's a point at which I should be able to know if I am a silent celiac or not. Surely...
  17. For me, I just prefer to have a "from scratch" item, so, really, I prefer no cake mixes or gelatin. But, this turned out really good. So, they sat at room temperature for about 24 hours. They were AWESOME out of the oven. Very cake-like. Today, the texture has turned a tad more dense and muffin-like. Still very tasty, but not quite the same texture...
  18. I wasn't fond of the idea of the gelatin either, but all the gluten-free strawberry cake recipes call for it. I figured, it must be necessary somehow.
  19. I just made this - in cupcake form: Open Original Shared Link I used Betty Crocker yellow cake mix, and added 2oz of cream cheese to the cake recipe. Holy AMAZING cupcakes!!! They are pretty much perfect!!! I used my traditional vanilla icing, instead of her frosting and they were divine!! I'm interested in seeing if there's any change...
  20. I loved baking for my kids. I'm not great at it or anything, but did take pride in having amazing tasting treats. I had finally found the best cinnamon roll recipe - I believe on Pioneerwoman.com. Everyone RAVED about them! They were pretty amazing, if I do say so myself. I have seen many gluten-free cinnamon roll recipes, but I'm looking for The...
  21. Has anyone tried adding cream cheese to the BC yellow cake mix to make it more moist? I'm leaning toward trying that flourless chocolate cake. I would have gone with the first recipe, but I don't have some of the ingredients (like almond meal) on hand. Otherwise, I think I saw a strawberry cake recipe that uses the BC yellow cake mix and might try...
  22. "GS as a condition associated with prevalent gluten-induced activation of innate, rather than adaptive, immune responses" Can someone translate this?
  23. FIL is having his 70th birthday this weekend and I'm sure there will be cake I cannot have. I'd like to try my hand at making one myself. Are there any EASY recipes that create a great MOIST cake? I am new to gluten-free baking (this would be my first project) and would like to make something really great. And, did I mention EASY? Anyway, I don't...
  24. I think this area of medicine is still in its infancy. Westergren has it's own battery of tests (two antibodies need to be present in order to diagnose). I'm not sure about the overall sed rate and what that will tell you. They are aware that celiac and other autoimmune diseases are connected, but they don't know HOW yet. Could be that a gene or...
  25. Yeah, I'd steer clear of the milk products and go with easy to digest foods for a while: apple sauce, ripe bananas, rice, etc. Sounds to me like you might have ulcerative colitis or crohns. Have you had a colonoscopy?
