  4. Great, thanks! I'd hate to see all of that arrowroot go to waste, cuz I haven't seen many other recipes that use it. I also have a ton of almond flour - any ideas on what I can use that for? I'm so excited to experiment!
  5. Has anyone ever tried using arrowroot instead of potato starch in a bread recipe? I know that they're both thickeners, so what's the difference between the two? Do you think it would work? (I have SO MUCH arrowroot left over from a recipe that I didn't like much and am trying to find other opportunities to use it in the recipes I want to try) Thanks...
  6. Millet Yeast Bread from "1000 Gluten Free Recipes" by Carol Fenster. It looks pretty good and uses a lot of the more nutritious gluten-free flours. I'm new to gluten-free baking, and it's so annoying to have to buy all of these different kinds of flours.
  7. I'm looking at a bread recipe right now that calls for 1.5 tsp xanthan gum and 1 tsp guar gum. I've read other topics where people say that they sometimes use whichever one their preference is in any given recipe. I only have xanthan gum right now. Can I just use 2.5 tsp xanthan gum and forget about the guar gum? Thanks!
  8. I'm recently diagnosed, as well, and had my endoscopy two weeks ago. Don't worry, it's very easy. You just go to sleep for a half hour and when you wake up you won't remember a thing. I made the mistake of eating too much before mine. They said that I'd be ok if I ate 6 hours beforehand, and even though I had only a light snack my stomach didn't empty out...
  9. The first one went away after I took a dose of tylenol. Then I found out that Excedrin Migraine was on the Gluten Free Drug List, and that helped a lot with this last one.
  10. That was one of my most annoying symptoms because when I burped my throat would burn and I'd get a horrible taste in my mouth like rotten eggs. Found out it was acid reflux. Haven't had it since going gluten-free except when I ate hard boiled eggs, oddly enough. I don't eat those anymore!
  11. I'm 2 1/2 weeks gluten-free, and last week I had my first ever migraine. It lasted for two days. It started again yesterday and I finally took something for it today when I almost passed out at work. My doctor agreed that it's probably from withdrawl and said that it should go away in time...I can't wait. Hope you feel better soon, too.

  13. Thanks for the advice. I've actually been off of soy milk since going off of protein drinks. I've been too afraid to try it again, so I'm happy sticking with almond milk. I seem to be having a problem with eggs, as well. Do you know where I can find Pea Protein? Is it something that's easy to find?
  14. I used to drink protein shakes every morning until they started giving me a stomach ache, so I went off them for a little over a year. I tried it again two months ago, and I was in so much pain afterwards. But I realize the protein powder may not have been the right kind, could have had gluten in it, maybe it was old, maybe I reacted to the soy milk I mixed...

  20. Hi, I've already been diagnosed with Celiac based on a "very positive" blood test. The doctor says there's no doubt about it. I got my endoscopy done last week, and he said that I show all of the internal signs of Celiac. So I basically know that I have it. I'm now gluten-free and feeling much better.
