  1. Spa day is done and we had a wonderful time! I got strawberries blended with ice and water (no dairy). It wasn't quite as good as the one with yogurt, but better safe than sorry. And it was more about the experience, anyway, and having a nice, normal, relaxing day with my boyfriend.

  5. My boyfriend and I just finished eating - steak with steamed broccoli and bell peppers. First time making steak and it was great! My boyfriend loved it. He's learning about my diet so when he found out that steak is naturally gluten free he was a very happy camper
  6. Dove chocolate was my favorite before going gluten free, and luckily all of their chocolates are safe (and absolutely delicious!)

  8. I just spoke with the people at the spa. They don't let outside food in (that's not gonna stop me from having a protein bar and nuts in my bag though), but they said they also make smoothies with just fruit, water and ice. So I'm set. And I'm not worried about a CC issue because at this juice bar they only use fresh fruit, water, milk, and yogurt....

  10. I went off dairy shortly after going gluten-free about two months ago. I was eating greek yogurt and cheese, and it was giving me a stomach ache. I've been able to handle trace amounts of milk in protein bars and butter/chocolate chips in the cookies I occasionally make.   11. This is the recipe that I use, and they taste just like nestle cookies. Only difference is they came out a little flatter but when I put them in a tupperware container they stayed soft. They're really easy and delicious and my boyfriend couldn't tell the difference between these and my old gluten-filled cookies! He requested that I make them again this weekend...

  13. Haha, so I kept having a reaction, and I've decided to just stop eating Udi's altogether. I baked two batches of bread this morning and am just going to stick with things I make myself that I know are safe. Maybe once I've healed a little more I'll try a piece again to see if I react, but right now it's not worth it. But my bread is way better than anything...
  14. Yeah my boyfriend thought that I was overreacting and being paranoid, too. He's easing into things better though now that he sees that I'm still the same person and can eat all of the foods I love with a few switches (and it helps that we both like different types of food, so we don't share many of the same jars).   17. I'm sorry you're having a hard time. When I went through my endoscopy I didn't eat for about 15 hours beforehand. Afterwards I ate a banana and instantly felt like someone was punching me in the stomach. I was pretty sick for a few days.   18. Thanks for the advice, everyone! And no, I didn't have anything like gum/mints prior to feeling sick. I had felt it before after eating the quinoa dish, so I'm pretty sure it's from that. Haven't eaten much since and feel kinda gross. I've had strawberries and almond milk on their own before and don't remember them bothering me, but I'll test them again...
  19. Yeah, I think I'm going to have to do that. Also, I've only been gluten-free for about two months. Is it possible that my body is just extra sensitive to certain ingredients because I'm still healing?

After doing some more thinking about it, I'm tending to think that it may be the xanthan gum (rather than CC or low levels of gluten) because of its supposed laxative effect.   24. I know how you feel. I got massively sick for most of February and March. I went to three different doctors before getting my diagnosis (and I was the one who said "I think it could be Celiac. I want to get tested for that"). Then I had to get my endoscopy done twice because it didn't work the first time. It was really stressful. Just keep looking forward...
