  1. Hi everyone. Thanks again for the responses and listening to me vent. It's been a rough week, but I got something settled at work today and already feel more relaxed. I'm going to try a few relaxing techniques. What's funny is that I'm a part time yoga instructor, so I know a lot of them. I should just put them into better practice and find other things...
  2. Thanks everyone for the replies. I feel like I'm doing everything right in terms of my diet and avoiding CC. But my anxiety over the past few months has seemed to increase even after going gluten-free. I don't know what to do, and I just feel like crying right now because I don't want to live my life in this constant state of anxiety. I think a lot of it...
  3. Over the past few months (pre-diagnosis and gluten free) I feel like I've been under an incredible amount of stress, and I feel that it could be having a negative impact on my digestive system and healing process. I have a high level of anxiety, get migraines more frequently (I'm on the verge of one right now) and run on little sleep. I'm not allowed to take...
  4. Oh my goodness, that is terrifying. I don't blame you for being so upset. I can't believe chefs in a hospital of all places would be so clueless. Really though, allergens is something that every chef should be aware of and teach their staff. My little sister finished culinary school shortly before my diagnosis. When I told her about it, she said, "Oh yeah...
  5. Hi JewelZZZ and welcome! Yes, your son has Celiac, and that would probably account for him being underweight. The problem is that some doctors will not officially give out a diagnosis without both a positive biopsy and blood test. But as txplowgirl said, they may have missed the area. And it is possible to have false negatives. But there are no false positives...
  6. Yeah, the Godiva news was a hard blow for me, too. I stick with Dove (which I loved before going gluten-free anyway), but I do miss the white chocolate/strawberry truffles. PS Milka chocolate is a no, as well. A lot of times their ingredients are written in other languages, but I found one in English. I can't quite remember but it either contained...
  7. You're welcome! I haven't tried any other flour blend with this recipe, but I'm tending to think that most balanced blends would work fine. Good luck and let me know how it comes out!
  8. Sure thing!
  9. Actually I make a gluten-free buckwheat bread that is incredible. I was surprised when it came out of the oven that it had the same texture and amount of flavor as regular bread. None of the pre-made breads I've tasted have even come close to this one. And I've passed off my gluten-free chocolate chip cookies as normal ones. I made them for some people...
  10. I'm visiting my aunt in the Hamptons, and she loves a Chinese restaurant called Tony's Asian Fusion and wants to take me there. I highly doubted that they'd have gluten-free options, but I told her I'd call the restaurant to ask them about their menu. The conversation with the restaurant rep went like this: Me: Hi, I was just wondering if you had any...
  11. Hi. So sorry you're having such a hard time. Nightshade free is worth a try, but if you think you're casein intolerant you should look at that, too. Kefir I've heard is very good for digestion, but it is also a dairy product. Is that bothering you? Best of luck!
  12. I was never a big egg eater in the past. After going gluten-free, I made some hard boiled eggs to help up my protein intake. After eating one, I got very bad acid reflux - so that was the end of that! Oddly enough I can tolerate them only if they are baked into something. I guess because I'm only getting trace amounts of it.
  13. Amusing story: I went out to lunch with three of my family members: my very informed and supportive father, my grandfather (who does everything my grandmother says), and my crazy Jewish grandmother (not to stereotype - she's just a very Jewish woman who happens to be a little off her rocker - this is the same woman who told me, "I think I might have...
  14. You should just call them. They were very nice when I called to ask them about their gluten free buckwheat flour because it didn't say on the package if it was made in a facility that produces wheat. The woman was very helpful and said that it is made in the same facility but that they are very careful and clean everything really well. "We are very, VERY...
  15. I can understand your frustration. It sucks that people either don't know what it is or refuse to accept how serious things like crumbs or using the same fork can be. I normally get people who mean well but don't understand, so I'm really polite with them. Like a woman trying to offer me a pie-type dessert who said, "You could just eat around the crust...
  16. Hi Nats mom, Everyone has a different sensitivity level. What's scary is that some people don't have a reaction at all, so they cannot tell if they've been accidentally ingesting gluten. But yes, any amount of gluten exposure, even as small as a crumb will keep the disease active and progressing in her system. You may find that she becomes more sensitive...
  17. Although, I did write: "If you have a cure for Celiac, the medical community and I would love to hear it because we
  18. Huh, for some reason I can't post a reply on her page anymore. Did she block me? lol!
  19. Haha I flipped a bit and posted a comment. I fear it is a losing battle with this nut.
  20. I've always been very well organized and wanting to do things the right way. At work, I would be the one who closed up and didn't have a problem until a few months before my diagnosis. I felt like I started developing more anxiety about it. Even if I knew I already locked something up, I would be afraid that something would happen to mess things up while...
  21. That article was horrible. I began looking through the comments a bit, but it just made me too upset.
  22. "Happiness can't be traveled to, owned, earned, worn, or consumed. Happiness is living every minute with love, grace and gratitude."

  23. I would forget what I was saying a lot. I could be in the middle of a story (or sometimes in the middle of a sentence) and just get lost or completely not remember what I was talking about. I think it's gotten a little better, although sometimes I wonder if it's real brain fog or just me being spacey There was one really bad day last month - do you...
