  2. I think I bore the brunt of my withdrawal done within the first few weeks. I started getting really horrible migraines during the second and third weeks, I believe. I've been gluten-free for almost two months now and am feeling much better (thank goodness the headaches are gone!) It's different for everyone, but it does normally take a long time to completely...
  3. Was this a blood test? It appears to be normal, but there is a 20% error rate for blood tests (I actually think my sister had a false negative - I'm so sure she has some sort of intolerance). And I've heard that some people have a gluten intolerance (that isn't Celiac) that doesn't show up in test results. If you think it could still be Celiac or an intolerance...

  10. I really love Dove dark chocolate and haven't had any sort of reaction to it (knock on wood). Their company has said that all Dove chocolates do not contain gluten. And thank goodness! I don't know how I would have gotten through gluten withdrawal without it!

  12. I slice my bread and put the entire thing in the freezer. I like it toasted, so I take it out of the freezer and put it directly into the toaster when I want it. Works great.

  14. It definitely sounds like you've got a lot of symptoms that many people on this board experience as a result of their Celiac or gluten intolerance. It couldn't hurt to see your doctor and ask for a blood test/Celiac panel.

  17. I use Bob's Red Mill to make chocolate chip cookies, and they actually turned out really wonderful - literally couldn't tell the difference between that and my old cookies. I haven't tried it with anything else, though.

  20. Ok, thanks for the advice. I think I'll give them to a friend. I'm only using one right now - it has my xanthan gum in it, but the powder is inside a plastic bag and not touching the tupperware. That should be okay right?
  21. I've gone through my kitchen and have gotten rid of a bunch of pre-diagnosis cooking supplies. Among them, I threw out a bunch of tupperware containers that had scratches on the bottom. My question: I've had a set of ziplock tupperware for about a year now. They were only used for when I made pasta sauce. I'd make a big batch and store a bunch in the freezer...
  22. I've heard that some buckwheat products actually have wheat mixed into it, so make sure whatever brand you get is 100% pure buckwheat. Also, Bob's Red Mill buckwheat is made at a facility that produces wheat. Don't make the same mistake I did. Luckily I realized this before I opened it and was able to return it.
  23. I've heard that people with Celiac are prone to other intolerances, and eggs are one of them. Interesting you ask your second question - I've found that I can't eat eggs on their own (hard boiled eggs gave me horrible acid reflux), but I'm okay when they're used in baked foods like bread and cupcakes (gluten-free of course!).
