  10. Libby, your results are from the blood tests right? You are missing the gliadin tests, and the gliadin blood tests are out of date, so many doctors don't bother with them anymore. I had been accidently gluten-free for two months at a time, when I went on a high protein/very low carb diet back in 1998 and again in 2000.   13. Sara, I was wondering if it would be possible for me to make these recipes with a dairy free substitute. I can't use butter and I know that some recipes don't work if you use shortening.   18. You can be gluten intolerant/sensitive without being Celiac. It is possible to have an intolerance to gluten and not have either of the main genes they know causes it. There is still a lot of research to be done and there may be more genetic factors involved than they have found. If you are developing antibodies against gluten, then you can't eat it. Period...

  25. Mary, You could also try freezing single servings of the meals you do cook. They would be much healthier and you can be sure they are gluten-free. Just cook twice what you normally cook and freeze half. This will cut down on a lot of cooking. I find ziploc freezer bags come in very handy! God bless, Mariann
