  3. Haven't tried it yet, but my dad told me about kale pesto. Kale, olive oil, pine nuts and parm cheese in the food processor. Would be good on a piece of chicken or on some veggies.

  6. In my case I intentionally ate gluten as a challenge. The following day I had a mild headache and thought I was in the clear. HOWEVER, 4 days after the gluten I began vomiting and did so for an entire day. I only ate gluten one day and really thought I was ok.   7. I have read about cross contamination from things like toasters. I can understand about crumbs getting on gluten-free food. However, what about the case of hot temperatures. With packages there are too many possible hidden things that I am too new to be aware of. I use condiments like salt/pepper, sesame oil, olive oil, balsamic and tamari (wheat free) for flavorings.   11. I'm a bit confused here. I understand that Celiac is an autoimmune disease where consumption of gluten causes the body to attack itself and the villi are damaged. In the case of someone who is NOT Celiac but has sensitivities to gluten are the villi also damaged? If so, why? How are they being damaged? In my case I have tested negative across the board...

  13. Just out of curiosity, have you ever been tested for giardia (parasite?). I got it when I lived in South America and the sulfur burps are what made me think of this. If untreated it can come and go for a few months.

It is extremely difficult because Asians usually do not get Celiac so doctors here don't even know what it is (aside from having read it on a page in a medical text).
