  1. Maybe this is old news but I was so excited today when we went to Unos and found an expanded gluten-free menu! I had the guacamole burger on an Udi's gluten free bun and it was delicious. We were treating my daughter to lunch after her appt at University of Maryland to discuss her possible celiac diagnosis (positive bloodwork so far). The timing couldn...
  2. She's in 3rd grade (turning 9 tomorrow). What accomodations would she need exactly?
  3. I was diagnosed earlier this year and was waiting to get my kids screened until their next well child visit. My daughter started having some tummy issues that didn't resolve in the normal time if it had been a virus so I took her in and request the celiac panel. I don't have the results in hand but her iga was normal but TTG slighly elevated (normal is...
  4. I was gluten light for 2 months then did a 2 week gluten challenge and that was plenty to show positive results on the bloodtest.
  5. My significant symptoms started after my 2nd child was born. I did not have a c-section but I suspect any stress on the body can trigger it.
  6. Gluten free chicken parmesan rollatini... I'll definitely make it again!
  7. I keep a bag of frozen shrimp in the freezer. I put a little olive oil and seasoning on them and either make them on the grill or George foreman. Usually I serve with rice pilaf. I also try to keep chicken tenderloins in the freezer because you can cook them with thawing. Omelets for dinner are also a quick meal when crunched for time.
  8. It's so hard yet I also refuse to eat solely at home. We went today to a dinner theater because a neighbor was in the play. They started with pre made ceasar salad which I had to refuse even though the waiter offered to take off the croutons. Then the "bread bar" was open... Finally the buffet after over an hour. I could only eat the chicken and apples...
  9. When in doubt I stick with oil and vinegar... Think I will look for those pavkets though.
  10. How exciting! Congrats Grandma.
  11. Was she low on any vitamins or minerals (iron, vit d, etc.)? If not, I'd probably skip it unless she's having any remaining issues on the diet.
  12. I was fully functional on gluten just some annoying symptoms but never enough to call in sick. I did a 2 week challenge prior to my blood test and it was enough to get positive results.
  13. I have eaten dried mangos and nuts from nuts dot com. They have a great gluten free variety.
  14. I love the pecan nut thins and they don't seem to cause me any issue. I like the taste of crunch master but find they have a bit of an aftertaste.
  15. I have been gluten-free since April and I am now having more good days than bad. I believe I was glutoned on vacation a couple weeks ago and have developed dh but the nausea and headaches are greatly improved and the brain fog seems to be lifting. Hang in there... I was disappointed when I wasn't seeing immediate improvements but I can now tell a marked...
  16. No noticable GI symptoms lately. Your theory seems to fit my situation!
  17. Thank you both! I am able to keep the itching somewhat under control with cortisone cream. I think this was my lesson not to take any risks with unknown food items... now that I'm home it's much easier to be strict with my diet.
  18. I was diagnosed with celiac disease via bloodtest in Feb and biopsy in April. I've been 100% gluten free since April. I never had any skin reactions but a few weeks ago when I was on vacation I got bumps on my legs that looked like bug bites (red inflamed but crater like center). A few would appear each day and it capped out at about 15 or so bumps isolated...
  19. Back from our cruise and overall I give Carnival high marks for accomodating gluten free. The first night the waiter told me the couple options they could make gluten free - I stuck with steak, baked potato and steamed veggies. After that the hostess came each evening to the table and took my order for the following night and I could order just about anything...
  20. 6/24 sailing. I will report back on my gluten free findings. I am sitting in the phoenix airport with a delay and its very lacking in gluten-free fare. Ended up with sunflower seeds for dinner.
  21. This will be my first trip gluten free. I've read great things about Carnival's ability to handle gluten free meals. I have already contacted them and have it noted in my reservation and plan to talk to the dining room staff on the 1st day. Anyone with recent experience? What was good, bad? Did you eat at the buffet at all and if so what did you feel...
  22. I am doing the same. I am starting with the whole dairy products like you list above. If I don't see relief I am going to go full throttle so to speak and look at milk in other products. It seems I have only had real negative symptoms with large amounts.
  23. YAY! Thanks for sharing. I am happy for you.
  24. Yes... About 2 months gluten free since my last gluten challenge. I seemed to tolerate dairy without issue until the last 2 weeks. Of course it's right before vacation and gluten-free and dairy free will be even more challenging. Bummer! I am ready for a break thru without these roller coaster symptoms. The endoscopy showed subtotal villous atrophy but...
