It is the only mayo I ever tried and really liked. I have tried other mayos with canola oil and they tasted so bad to me I threw them out. If I didn't have Earth Balance Mindful Mayo I would have to make my own. I keep stocked up on it in the fridge. If you get it make sure it is the one marked Original. I use guar gum exclusively now (I had to switch to it because found out I couldn't have xanthan gum). The substitution amount is the same. However some including myself find that they need to add an additional 1/2 teaspoon per cup of glutenfree flour when using guar gum instead of xanthan gum. It depends on what you are making though. The only simple thing I do to replace wheat flour is to use potato starch to replace wheat flour when making gravy from the drippings of chicken or turkey.
