ARCHIVED New Year's Party
happygirl replied to Mahee34's topic in Gluten-Free Recipes & Cooking Tips
I am a big 'dip' person..... One of my favorites is the 7layer/Mexican dip. Refried beans, sour cream mixed w/taco seasoning packet (I use McCormicks), then whatever toppings you like....guacamole, tomatoes, jalapenos, black olives, lettuce, etc...then I always top with shredded cheese and green onions. Serve with tortilla chips. Another variation... -
ARCHIVED Snooze! Need Encouragement To Feel Better!
happygirl replied to a topic in Coping with Celiac Disease
Girl, I hear ya! I am right there with you. I am realizing that I am more and more sensitive to tiny, tiny amounts of gluten and as a result, I am learning that cross-contamination is everywhere. I got sick yesterday at Wendys because the guy who put the shredded cheese on my potato must have had gluten-filled gloves (it was the only thing I ate and I had... -

ARCHIVED How Did You Acquire Celiac?
happygirl replied to tasha's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I think that I got Celiac shortly after I had mono. That's when I got very, very sick from it, at least. -
ARCHIVED Still Reacting After Saturday Night....
happygirl replied to cherie012's topic in Parents, Friends and Loved Ones of Celiacs
I hope that your son continues to feel better each day! If I were to ingest breaded shrimp, cake, and half a roll, I would probably be sick for a solid month! Even if I get a sprinkling of bread crumbs, I'll be sick for days. So I would say it probably is normal for him to still be sick. Poor thing! Hopefully he'll be feeling better for Christmas. -
It's been posted here before, but the wings and sauce (except for two? of the sauces, I think) are safe at Buffalo Wild Wings, in case anyone is interested. I've eaten there a few times and have had great experiences. Yay for no flour!

I have that cookbook mentioned (Gluten Free baking by R. Reilly) and love it! Nice to see more recognition of Celiacs!!!!

I've eaten at the PF Chang's in Atlanta with no problems. Also, there is a upscale mexican place called Uncle Julio's (I think its a chain in large cities?) that was VERY knowledgable about everything that was in their sauces, marinades, etc. I ate their shrimp with jalapenos and had a great time. Also, Atlanta has many Chick-Fil-As....I LOVE them! They...

ARCHIVED Still Reacting To An Exposure From Last Wed?
happygirl replied to e&j0304's topic in Parents, Friends and Loved Ones of Celiacs
I know I'm not a kid but it takes me a minimum of 3 days to feel remotely normal....and sometimes, it takes up to 2 weeks. In the cases where I get glutened twice over a couple day period (very rare, but awful!) it usually takes a lot longer to heal. I hope that Ella continues to improve!! -

Michelle- This info is from a friend in DC First-Here is a link that has some places from the Celiac group in the area. You'll have to look to see which ones are actually in DC as opposed to NoVa or MD. Open Original Shared Link And, to supplement it, here is what she added based on looking at the list: "I'm looking at the list and I've been to...

Welcome to the board! I seeing a rheumatologist for my bone and muscle pain-had all the symptoms of severe rheumatoid arthritis....had blood tests, MRI, CT scan, etc etc....was taking arthritis drugs (I was 23 at the time!)....none of it helped. Finally was diagnosed w/Celiac, went on a very strict gluten-free diet and my pain is gone! Only times it comes...

I am jealous! The only time I want McDonalds fries is when we are on the road, traveling.....and those are mainly the times that I've gotten sick from eating it and have to find a restroom ASAP! I don't know if its the fryers or the cross-contamination but its definitely a gluten reaction. It's not every time that I eat it, but the risk was too high for...

ARCHIVED About To Have A Panic Attack
happygirl replied to terriH's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
The bone pain was one of my worst, most painful symptoms....and it comes back anytime I have any gluten. Sorry to hear about your pain. I hope that the diet will help. Here are some things that are gluten-free and that I like (and I remember feeling like you....How can I do this diet? I was married for 2 months and in grad school when I was diagnosed... -

happygirl replied to a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Kim, Unfortunately I don't have any words of wisdom to help you out other than encouragement to keep searching for the root of the problem. And until then, you poor thing, I hope the itching decreases! Keep us updated. -
9 times out of 10, I would get sick after eating fast food fries.......So I have pretty much cut them out.

ARCHIVED I Need Some Advice
happygirl replied to Slamey24's topic in Parents, Friends and Loved Ones of Celiacs
Many french fries are gluten-free, but that was one of my first mistakes (oh, do I remember being sick that night!). It hadn't occurred to my husband or I that frozen french fries could have gluten in them! (needless to say I had been on the diet about 1 week and didn't know that I had to know EVERYTHING that went into my mouth). We baked the fries, had... -
ARCHIVED gluten-free Triscuit Recipe?
happygirl replied to RiceGuy's topic in Gluten-Free Recipes & Cooking Tips
I am SALIVATING at the thought of that! I told my husband the other day that most days, I really am "ok" with my diet---I cook great foods, make good lunches, specifically eat at places that cater to gluten-free needs..... But then there are some days when you just want a darn TRISCUIT!
