ARCHIVED Need Ideas From The Bakers/cooks In Here...
justlisa replied to justlisa's topic in Gluten-Free Recipes & Cooking Tips
Thanks for the suggestion...and the smile you put on my face! I am addicted to homemade salsa! Absolutely addicted...could (and do) eat by the bowl full... I even put in a wrap...as a garnish for grilled meats. It's my "go to" snack food... -
ARCHIVED Need Ideas From The Bakers/cooks In Here...

Hi All! I'm cutting out corn...so... I was hoping someone might have some ideas about making own "tortilla chips". I was wondering if I could, somehow, take my brown rice tortillas and bake them (or something) and cut into "strips". I enjoy making my own salsa and would like to find a good replacement for my corn tortilla chips. Any ideas... -
ARCHIVED Depressed Cause I Can't Eat Anything
justlisa replied to Sage122's topic in Coping with Celiac Disease
Why is this post almost exactly like the other one from a different OP... Very odd... -
Wow, Ron...that's such a shame... Are Five Guys different in different states? Different food? I just assumed they were all the same (menu, anyway). Just the fact of such limited gluten exposure seemed like such a winner... That's a real bummer... I was so impressed with the one I went to in Shrewsbury, MA.

ARCHIVED Exhausted All Of The Time!
justlisa replied to Skittles's topic in Coping with Celiac Disease
Magnesium deficiency is something to consider very seriously. Keep in mind that blood tests alone are, often, ineffectual at diagnosing magnesium deficiency as only 1% of our magnesium can be located in our blood...the rest is stored in our organs and tissues. The last information that I read indicated that over 50% of the population (closer to 2/3 actually... -
I would like to add this: Because of what is currently known, many people think/believe that you will be doing damage to your intestines. This is absolutely true...for some. For others...not... You see, when you are gluten intolerant, your body's immune system kicks into overdrive. The immune system attacks the small intestine...hence, the damage...

The truth is... "gluten intolerance" or "celiac" is TOTALLY IRRELEVANT. If you have either one, gluten can harm you...in many, many ways. In fact, MANY people do not experience immediate symptoms, BUT they develop some devastating symptoms and/or diseases... And, you MUST UNDERSTAND that some things will not "get better" or "go away" just because you...

I was very impressed...still can't quite believe it was a "fast food" place... The first time, since gluten-free, that I went to a restaurant (a very nice little restaurant which happens to be on the gluten-free Registry) as extremely disappointing to me. I asked for their gluten-free menu. The waitress told me that they didn't have a gluten-free menu...

I really haven't eaten out since going gluten-free (it's a trust issue)... But... Today, after my husband took me to my mri appointment, he was starving. So, we went to Five Guys and Fries so he could eat (I figured I would just sit, drink my bottled water, and watch him...lol). I mean.. I didn't ever really eat "fast food" BEFORE I went gluten-free...

ARCHIVED I Made An Interesting Discovery Today!
justlisa posted a topic in Coping with Celiac Disease
For reasons I won't get into here, my full brother and I did not speak for a very long time (family dynamics...sigh). However, approximately 4 years ago, he found me on facebook and sent me a friend request... We've been friends on Facebook ever since... So, lately, I've been posting a LOT about celiac/gluten intolerance/gluten free/etc. Today, I posted... -
Finding a doc to be your advocate is not a s easy as people would think...sadly... Just keep going...YOU are, ultimately, in charge of your well being. I do want to add that magnesium deficiency can exhibit the same racing pulse or palpitations... I know this from personal experience. There is one truth that most of us have learned is...

ARCHIVED Trapped Wind (Chest Pain) Constipation And Bloating?
justlisa replied to Kirstie's topic in Coping with Celiac Disease
My first question is: "Chest" pain? Second question: How do you KNOW that the "chest pain"is "trapped wind"? Third question: It's been a couple of weeks...how have you been doing? -
ARCHIVED Testing After Being Gluten Free
justlisa replied to Peppa-minto's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
It was a sincere question... I really haven't come across that before... I was just looking for clarification because "testing" was being discussed, but you said "diagnosis". From what I've been reading, very few get a "diagnosis" with positive blood work, anyway... As for the rest of the discussion: There are SO MANY sick people who are struggling... -
ARCHIVED Testing After Being Gluten Free
justlisa replied to Peppa-minto's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
You say diagnosis instead of testing. So, you didn't have blood work before endo? Interesting... I've not seen that... -
ARCHIVED Testing After Being Gluten Free
justlisa replied to Peppa-minto's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Seems to me that the advice of 3 months (by many members here and other forums I visit) for an increased chance of "accurate" test results is based on the experience of members AND the experience of others (many folks have stories of "false" negative testing). As I've said before, I believe that the current testing is seriously flawed...and that, at some... -

Hello all! I came across the site, below, and I found it incredibly informative. The site belongs to Krispin Sullivan (a well-credentialed nutritionist). TONS of information! TONS! It will take some time, but you really should read through her site/info. I, personally, loved reading the sections on magnesium and thyroid! I truly... -

ARCHIVED 1 1/2 Years And I Got Glutened Again!

ARCHIVED 1 1/2 Years And I Got Glutened Again!
justlisa replied to AVR1962's topic in Coping with Celiac Disease
My first question to you... How close has your relationship been with these friends? Have you had the type of relationship where your friends felt that they could share their feelings with you? If so, you might want to take a step back and put it in perspective... Truth is, sometimes, we can be just awful to others when we are sick... You might... -

Btw, I have had gastrointestinal issues for years...bloating, gassy, constipation... Though not "severe" . Reflux and gastroenteritis began about 3 years ago... I haven't had to take my omeprazole since going gluten-free.
