    I've been researching xantham and guar gums... Have to say that it sounds absolutely disgusting (a "mold" derived on the surface of corn (etc) for the purpose gluten replacement)... Can't see myself using it...which is a shame/dilemma since most of the gluten free baking recipes I find use them...

I keep seeing similar disclaimers/statements from companies regarding their products not having gluten in the "ingredients"... I would like to say, though, that his cavalier attitude (McDonald's) at the end is just another example of how completely "ignorant" the medical community is regarding food/autoimmune issues...     Excellent question! Personally...knowing what I know now...I would ABSOLUTELY raise my son gluten-free... Without a doubt in my mind... I agree with those who said they don't see it as a "punishment"... There's a lot to learn...yes. Takes more effort...yes. Challenging...for sure. BUT IT IS HEALTHIER.     Mommida... puberty? Sweet! My son is 17 now (college in September...though he will be living at home since we're only 7 minutes from the college...yes, he LOVES this plan...lol). The only difference I see in 17 and 13 is the drivers license...

    Kareng... I agree... I would like to add: If he was diabetic, would you allow him to make his choices (at 7 yrs old)? I know it's difficult but, would you? "Mom" is, usually, the first line of defense against the bogeyman...in sickness, the disease is the bogeyman... Tough decisions are not popular or easy...especially during the time when they are...

    Interesting discussion... I am curious though about the "protective benefits" of breastfeeding in relation to celiac/gluten intolerance.... I was under the impression that gluten would be present via the breastmilk...???
