  1. When people first are diagnosed their digestive system is in stress. It's recommended to start simply. Meats, fish, fresh veggies, potatoes, rice, fresh fruit are good for starters.

    Dairy CAN be an issue but not always for everyone. And it can be reintroduced once some healing takes place.

    Celiac diasease biopsy: What are other possible causes of biopsy changes that mimic celiac disease?

    Cow’s milk protein sensitive enteropathy (CMSE), viral or bacterial infections, medications (especially aspirin like arthritis medications e.g. ibuprofen etc), autoimmune enteropathy, Helicobacter pylori infection (the stomach ulcer bacteria), AIDs, common variable immunodeficiency, and lymphoma of the intestine are all possible causes of small intestine changes that may mimic celiac. However, if you have classic celiac type symptoms, a positive celiac specific antibody (anti-endomysial antibody or tissue transglutaminase antibody) and a positive response to a gluten free diet then celiac is the likely cause. The likelihood is further increased if you carry one or both of the two major genes associated with celiac disease, DQ2 and/or DQ8. Normalization of celiac specific blood tests and the biopsy after a gluten free diet confirms the diagnosis of celiac disease.

    I only added this because I know that you have a close family member with Celiac. I would assume that you would be gluten light due to this.

  4. I buy Pillsbury Milk Chocolate a lot. I don't buy Duncan Hines because I have seen gluten listed.

    I have no problem with products that are not listed as "gluten free", but contain no gluten ingredients. Some might be especially sensitive to products from a shared facility. I'm not one of them.

  5. Yes, Deb through the biopsy sample. Although, at times a doctor can see visible damage. Directly from my endo, my doctor explained to my husband that is saw stunted villi and visually confirmed Celiac pre pathologic report.

    Please take note though, there are other causes for blunted villi aside from Celiac. It is most consistant with Celiac, but not exclusive too.

  6. No, I meant that there is no guarantee that anything is totally gluten free, unless it's something like a banana. :D Landon asked is Capt. Morgan and Seagrams 7 were gluten free.

    Distrilled alcohols COULD leave trace amounts of gluten, even though it is considered safe for Celiacs to consume. I've never had an issue with either, including the seven-up.

    They are considered safe for Celiacs to consume due to the distilling process. I would not consider anything gluten free unless it was tested or a single ingredient such as a banana.

  8. I am not sure this is correct. By accident, I discovered a link from my profile in Google (celiac and headaches) and when I clicked on it it took me right to my full name, address and location! This is shocking. I now deleted my personal name/address info.

    Try to google other names. I do not believe that you can see other's personal information. I just googled your name Snubu, I could see no personal information.

  9. I have eaten in Waffle House. I generally would not recommend it due to a high likelihood of cross contamination. I ask them to cook my eggs bacon or hash browns on a clean area of the grill and I watch. Most employees have been very accommodating and concerned about doing everything right.

    I tip well for their efforts.

  10. size="3"]Hello all! I am new to this, and I was wondering if there is a list of ingredients, that don't actually say, gluten, wheat, rye, or barley, that we should watch out for? I was doing pretty good with just eating the basics, broiled chicken, potatoes, and rice. Yesterday I had some barbecue sauce on the chicken for dinner, and had an episode during the night. So I was wondering if there is a list?

  11. Please save your money. If you are sick because of gluten, it will run it's course.

    It's not often that we hear about a Chiroprator diagnosing people, but if the diet is helping you, great. But, are other food intolerances his line of expertise? :)

  12. however, if I am healed enough to tolerate a bowl of wheat pasta, how come I still get sick from cross contamination? I am just wondering.

    Sometimes that remains a mystery between all of us. There seems to be a lot of variables which I hear from others. How long ago were you symptomatic of cross contamination and were you certain it was gluten? I have heard from other that after a deliberate gluten that they had no problems, then another time a severe reaction. Why it varies, don't know.

    I have been gluten free for over four years now and I don't ever react, either with full gluten or cross contamination. I consider myself, as long as I remain gluten free, in total remission.

    And as we began in pain, weight loss, malabsorption, bath room issues it took a while to reach that level of discomfort. It may take some time to be symptomatic again once healing has taken place.
