  1. I have some ideas that might help anyone.

    Taco Bell- has Fresco crunchy tacos (lettuce, meat, and tomatos)

    Applebee's- Has a great Oriental Stir Fry ee!!!

    The diet is very confusing in the beginning. Fear Not :D We can walk you through it step by step.

    I don't know what I would have done when I was first diagnosed several years ago. It's great to have someone hold your hand.

    Let us know Tuesday after your doctors appointment. And, don't let your doctor blow you off. Insist on the Celiac Blood Panel.

    CONTAINS: WHEAT AND MILK.

    (Natural beef flavor contains hydrolyzed wheat and hydrolyzed milk as starting ingredients). That's right from the McDonalds website and it clearly states that it has wheat in it.

    Yes, I am aware of this. Do a search here and get some additional information on McD's FF - there's a lot. B)

    You might have an allergy to wheat and perhaps a gluten sensitivity.

    Celiac can be diagnosed by a Serologic Blood Panel:

    Antigliadin antibodies (AGA) both IrA and IgG

    Antiendomysial antibodies (EMA) - IgA

    Anti-tissue transglutaminase antibodies (tTG) - IgA

    Total IgA level.

    Generally, a good test is a positive dietary response and that seems to be working for you. You could continue on a gluten free diet and do a challenge at a later time. The autoimmune response in Celiac Disease is triggered by ingesting wheat, rye, barley and malt (some oats). You might also have a wheat allergy with your respiratory symptoms.

    Try directing your doctors in this direction. But, should you request further testing, you must remain on gluten until testing is finished.

    The potential risks could be life threatening eventually. No, you won't die from a piece of cake or slice of pizza. ;)

    If you are officially diagnosed with Celiac, it's an autoimmune disorder. It's not the amount of gluten that will hurt you, it the fact that the gluten make your body attack itself, thereby causing damage.

    You may not be symptomatic when you consume gluten, but I can assure you that there is a major war going on in your intestines.

    There are many disorders associate with uncontrolled Celiac. Diabetes, lymphoma, fibromyalgia or any type of arthritis. Gluten can cause ataxia which can cause neurological damage and some pretty serious malabsorption can make you talk funny and walk into walls or forget where you're driving.

    SO...it's your choice to weigh the risks ;)

    Welcome and read some posts here. It will be helpful to learn from other's experiences.

  7. Just wanted to add that the Celiac Associations consider McD's fries and hashbrowns to be safe for Celiac to consume. The McD's website does indicate wheat, but the processing is said to eliminate the danger for Celiac.

    With that said, some do, some don't. I do. :)

  8. This is a personal choice. Some very sensitive celiacs may respond to the chance of possible cross contamination during the manufacturing process. Frito/Lay products mentioned here frequently, although some contain no gluten, many here react.

    On the other hand, it often is a CYA statement. Due to the fact that many companies do not have the resources to TEST for gluten, therefore they cannot say, that there is no gluten in the product due to possible cross contamination

    Considering your daughter is so young and unable to speak for herself, I would error on the side of safety and not use those product that are produced in a facility that also produces wheat products.

  9. Your brother might be busy with other preparations. Ask him how to reach the caterer and contact them yourself. Check and see if they can prepare a separate meal without gluten (au jus or seasonings) plain veggies or whatever is on the menu. It won't be as good, but it won't make you sick.

    I always feel better when I am not depending upon other interpretations of my needs.

  10. Can you give me your opinons about being dairy free initially? I read that I should go dairy free for at least a few weeks as well before I will see real results. I am only 2 days in and craving something sweet, but aside from fruit or peanut butter I feel like there are not many options. So far i have been eating fruits and veggies, plain meats, and peanut butter. Any other ideas???

    Dairy is not required to eliminate, only if it seems bothersome to you.
