  1. Connie - ya gotta read the labels. Most of the "southern" ingredients are fine. You might want to think about buying Cecelia's Market Place Gluten Free Shopping Guide - until you learn the label reading thing.
  2. BUT HERE'S THE LOW DOWN: Don't depend on lists for your information, many can be out of date. Learn to read labels - it will be your ultimate safe guard and control in your hands. (ie. you have no one to blame but yourself ) Call companies to verify ingredient status if in doubt. Don't rely on internet information to keep you safe...

    I have found it useful, if you have a non-gluten eater or label reader, and you send HIM/HER to the grocery store for that "got to have ice cream". It's a quick reference at home, when YOU are not there to read the labels. Or handy for any one in your household who will shop for you when you are not able.

    You are wise to inquire about a current copy. Many products can change without warning. I have had both Cecelia's and Triumph's. But, I think that I prefer Cecelia's. Soon you will be able to read labels.

I don't share their enthusiasm, due to the fact that I have never seen any independent research to the validity/accuracy of their testing. Nor has Dr. Kenneth Fine published his research, after almost a decade of promising. The summary results that I have seen...

  11. Yes, genetic testing is only a percentile of probability, nothing more. And it's certainly not diagnostic. It CAN be used as a piece of a puzzle, but not solely independent. I have never been a fan of Enterolabs, but I do understand that it can offer a piece to that puzzle...AFTER, other avenues have been exhausted.
  12. I would eat before hand. Do not arrive hungry and don't worry about the catered event. If, by chance, you see steamed shrimp or crab claws, a cheese assortment or various non-gluten display - all the better. I don't bother the catering team. They are too busy and hired by someone other than ME. Generally, at these events, I talk too much to eat...

    I'd be willing to bet that once K8ling gets her PMS under control, dealing with a gluten allergy will be a piece of cake. Fighting battles on both ends is a challenge.

  23. Since she has had the Celiac Panel and a biopsy, there is no reason not to begin the diet. The gene testing does not require a gluten free diet. Never the less, if your daughter had a positive blood test, she does have Celiac. Biopsies do not always reflect effected areas and can be false negative. It took me about three to six months before I truly...
  24. It's offend recommended that you eliminate dairy from your diet when you go gluten free due to Celiac. The villi are damaged due to Celiac. Absorption is hindered because of the that damage. Dairy is one of those hindered.... Often, once healing takes place, dairy is re-introduced without an issue.
