ARCHIVED Having A Hard Time..
Nikki2777 replied to Lalasarah2727's topic in Coping with Celiac Disease
People told me there's a mourning period for the old you, and all she could eat, and they were right. I'm about 7 weeks in now, and I'm mostly adjusted. I've found plenty I can eat and while I miss some of my old things, I've found others I might never have discovered had I not gone Gluten Free. It is tough on a budget though, I'd recommend not trying... -
ARCHIVED Question About Snacks For A Tween
Nikki2777 replied to blmoreschi's topic in Gluten-Free Foods, Products, Shopping & Medications
I haven't had much luck with 'bars' - Snyder & Glutino pretzels are pretty good. One company (Z Garden I think) makes shelf-stable squeezable hummus pouches (you can find them on minimus.com). For a sweet treat Glutino Yogurt Covered Pretzels are beyond good, but probably won't keep in her bag. Pop chips (though they're made at shared facility I think... -
ARCHIVED Cottage Cheese?
Nikki2777 replied to Nikki2777's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks - just to follow up, the cottage cheese is quite far from everything else, so it seemed highly unlikely, but yes - you are right. The cafeteria manager called me back and read me the ingredients, so I feel a bit better about it. Funny, I only got it to supplement the lunch I did bring! I'm trying to set up a meeting with our cafeteria management... -
ARCHIVED Cottage Cheese?
Nikki2777 posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Without thinking, I grabbed a big spoonful of cottage cheese from company cafeteria. Has anyone heard of a cottage cheese with gluten? I'd love to eat it (already ate a spoonful before I remembered "that was dumb") I've only been gluten-free (for celiac) about six weeks. i think it's 1% or 2% if that helps. Thanks. -
How Soon After Gluten Do You React?
Nikki2777 replied to Luvbeingamommy's topic in Coping with Celiac Disease
K8tling, how do you know that it was cc at the beach, and not something after -- i ask because I'm still pretty new to this and this is the part I find confusing. How will I know if/what 'got' me. -
Sorry you're going through this. What is SIBO?

ARCHIVED Is Mister Softee Gluten Free?
Nikki2777 replied to Nikki2777's topic in Gluten-Free Foods, Products, Shopping & Medications
Wow. Direct from the company - thanks Mr. Softee! Dare I ask (since I have your attention) if the sprinkles and chocolate dip might be ok? -
ARCHIVED Is Mister Softee Gluten Free?
Nikki2777 posted a topic in Gluten-Free Foods, Products, Shopping & Medications
My first summer with Celiac Disease approaches and the jingle is in the air. Does anyone know if Mister Softee Ice Cream is Gluten Free? I went on the website and downloaded the ingredients: Open Original Shared Link But I'm still pretty new to this, so I'm not too sure about the whey and cargeenan (sp?) Assuming I can handle the lactose,... -
ARCHIVED Neuro Issues? Help Me Understand?
Nikki2777 replied to Nikki2777's topic in Related Issues & Disorders
Thanks so much! Can you recommend a gluten-free brand? Not sure I trust the guy at the health food store to know. -
ARCHIVED Pf Changs - Gluten Or Other Ingredient
Nikki2777 replied to kvanrens1's topic in Gluten-Free Restaurants
I recently had a bad episode at a PF Chang's, though I can't be sure it was a glutening or something else. I e-mailed them and they were extremely responsive, and asked me which restaurant and time, etc., They said they would follow up with additional training at the site. I was encouraged by how seriously they seemed to take it. -
ARCHIVED Neuro Issues? Help Me Understand?
Nikki2777 replied to Nikki2777's topic in Related Issues & Disorders
Thanks. What kind of vitamin/mineral supplements should I be taking? -
I'm really trying to understand the science. I was diagnosed with Celiac about 6 weeks ago. Think I had some mild GI symptoms (and endo showed mild villous atrophy) and only about a week before dx felt like something wasn't right mentally (difficulty forming words for a brief period). I've been gluten-free for six weeks and generally feeling better...

ARCHIVED Need A Break From Cooking All The Time!
Nikki2777 replied to pretty in paleo's topic in Gluten-Free Recipes & Cooking Tips
I looked into this Artisan Bistro (?) frozen meal delivery thing. You can customize your choices based on your allergies and I've heard the meals are very good. Maybe have a few in house for days where you don't feel like cooking? -
ARCHIVED Cookbook Recommendations?
Nikki2777 replied to Nikki2777's topic in Gluten-Free Recipes & Cooking Tips
That sounds really interesting, Sensitive Me. I've been wondering about what flours i should get in my home, and some fairly basic recipes. I really just need to find the time to stock up and get some food to cook! Thanks. -
ARCHIVED Any Way To Know If This Is A 'glutening'?
Nikki2777 replied to Nikki2777's topic in Coping with Celiac Disease
Thanks. I've been meaning to have a sit down with HR and the cafeteria manager to make sure there are options for me, so I guess I'd better find the time. As for the potato, I opened it myself, which is why I thought it would be safe! -
ARCHIVED Any Way To Know If This Is A 'glutening'?
Nikki2777 posted a topic in Coping with Celiac Disease
Few options for me today at company cafeteria, so I opted for a baked potato with a pat of butter (seemed like a safe 'self contained' option) and a small amount of parmesan, peas, carrots and cucumbers. Literally within minutes I had a rumbling stomach. Very odd for me, but I've only been gluten-free about a month. I was very careful to choose spoonfuls... -
ARCHIVED I've Decided I Don't Want This...
Nikki2777 replied to sophienina13's topic in Coping with Celiac Disease
Hah, just realized I had a typo (but you all seem to have gotten what I was saying) ^^ I waver between DISCOURAGING them from eating my gluten-free stuff and thinking it's best to swap in gluten-free options wherever possible. -
Hi - I'm trying to understand what effect non-Gluten allergies will have on my gut. Will they have long term impact on my villi and absorption if I continue to eat these things? I think I'm still a little lactose intolerant and have had a few reactions that I don't think are accidental glutenings since going gluten-free (Celiac) about a month ago and I...

ARCHIVED I've Decided I Don't Want This...
Nikki2777 replied to sophienina13's topic in Coping with Celiac Disease
I know how you feel. I was diagnosed just over a month ago and it's hard when the rest of the family is eating things you want! I've found that bit by bit, my kids are actually learning to like my gluten-free Pretzels, Cookies etc. (I've asked a lot of questions to find good brands/treats), which means less unsafe food in the house. I waver between encouraging... -
ARCHIVED How Much "cheating" Is Allowed ?
Nikki2777 replied to Tamber's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Diagnosed 1 month ago here - I echo everyone, and will add that I thought I had manageable symptoms, but they've gotten worse since being gluten-free. Now, an accidental glutening is just no fun at all. And I suspect it will get worse. This is nature's way of keeping you from cheating. What helped me, and still does, is thinking that research is moving... -
ARCHIVED Delicious Convenience Food
Nikki2777 replied to Nikki2777's topic in Gluten-Free Foods, Products, Shopping & Medications
Not frozen - just refrigerated. You can actually eat them cold, but I prefer them a little warm. And you don't need to add water. Try the Sprouted Brown Rice/Sprouted Quinoa with a little soy sauce first, it's so flavorful. -
ARCHIVED Delicious Convenience Food
Nikki2777 posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Don't get scared off by the name of the brand "Macro Vegetarian". I'm not vegetarian, nor do I try to eat macro, but these meals are delicious! I recently e-mailed the company and found that many of their meals are gluten free (I've been eating them for long before I discovered I have Celiac.) So, wanted to share. You can probably find them in your health... -
ARCHIVED Is The Effort All Wasted?
Nikki2777 replied to Nikki2777's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Thanks. This is helpful. I think I got glutened this last weekend, and I was miserable but at least don't feel like the end of the world. -
ARCHIVED Does Anyone Else Have Issues With Trader Joe's Labeling?
Nikki2777 replied to TGK112's topic in Gluten-Free Foods, Products, Shopping & Medications
Yesterday I looked at their sausages.... strange, none are marked gluten free. I read the labels - rice flour, etc., etc., everything fine, and then... I notice hydrolyzed soy protein : I'm confused. How does soy protein affect gluten free status?
