  2. People told me there's a mourning period for the old you, and all she could eat, and they were right. I'm about 7 weeks in now, and I'm mostly adjusted. I've found plenty I can eat and while I miss some of my old things, I've found others I might never have discovered had I not gone Gluten Free. It is tough on a budget though, I'd recommend not trying...
  3. I haven't had much luck with 'bars' - Snyder & Glutino pretzels are pretty good. One company (Z Garden I think) makes shelf-stable squeezable hummus pouches (you can find them on minimus.com). For a sweet treat Glutino Yogurt Covered Pretzels are beyond good, but probably won't keep in her bag. Pop chips (though they're made at shared facility I think...

The cafeteria manager called me back and read me the ingredients, so I feel a bit better about it. Funny, I only got it to supplement the lunch I did bring!   5. Without thinking, I grabbed a big spoonful of cottage cheese from company cafeteria. Has anyone heard of a cottage cheese with gluten? I'd love to eat it (already ate a spoonful before I remembered "that was dumb") I've only been gluten-free (for celiac) about six weeks. i think it's 1% or 2% if that helps. Thanks.

  11. I recently had a bad episode at a PF Chang's, though I can't be sure it was a glutening or something else. I e-mailed them and they were extremely responsive, and asked me which restaurant and time, etc., They said they would follow up with additional training at the site. I was encouraged by how seriously they seemed to take it.

  13. I'm really trying to understand the science. I was diagnosed with Celiac about 6 weeks ago. Think I had some mild GI symptoms (and endo showed mild villous atrophy) and only about a week before dx felt like something wasn't right mentally (difficulty forming words for a brief period). I've been gluten-free for six weeks and generally feeling better...
  14. I looked into this Artisan Bistro (?) frozen meal delivery thing. You can customize your choices based on your allergies and I've heard the meals are very good. Maybe have a few in house for days where you don't feel like cooking?

  20. I know how you feel. I was diagnosed just over a month ago and it's hard when the rest of the family is eating things you want! I've found that bit by bit, my kids are actually learning to like my gluten-free Pretzels, Cookies etc. (I've asked a lot of questions to find good brands/treats), which means less unsafe food in the house.   21. Diagnosed 1 month ago here - I echo everyone, and will add that I thought I had manageable symptoms, but they've gotten worse since being gluten-free. Now, an accidental glutening is just no fun at all. And I suspect it will get worse. This is nature's way of keeping you from cheating. What helped me, and still does, is thinking that research is moving...
  22. Not frozen - just refrigerated. You can actually eat them cold, but I prefer them a little warm. And you don't need to add water. Try the Sprouted Brown Rice/Sprouted Quinoa with a little soy sauce first, it's so flavorful.
  23. Don't get scared off by the name of the brand "Macro Vegetarian". I'm not vegetarian, nor do I try to eat macro, but these meals are delicious! I recently e-mailed the company and found that many of their meals are gluten free (I've been eating them for long before I discovered I have Celiac.) So, wanted to share. You can probably find them in your health...

  25. Yesterday I looked at their sausages.... strange, none are marked gluten free. I read the labels - rice flour, etc., etc., everything fine, and then... I notice hydrolyzed soy protein : I'm confused. How does soy protein affect gluten free status?
