This is a very helpful thread. After years of being gluten-free, I seem to have developed some intolerances too. Luckily they are not as severe as a gluten reaction. But they are annoying and require immodium! I've possibly narrowed it down to soy or xanthan. It's such a pain. I was feeling good for years and this just sucks. Anyways as usual, people are...

I think that xanthan gum produces better results in baked goods. It costs a little more, but you use very little in baking so it's not too bad pricewise.

I take back what I said, that Fry's cocoa in the prairies is gluten-free. Okay the small cans are gluten-free. The large cans sold at Costco say right on the label, "may contain wheat." -

Like the others said, it will come with time. It is a slow process and I think your body has to adjust to the "poison" removal and to absorbing foods properly as it should be. I was very sick for a long time and had difficulty with fitness. After being gluten-free, my fitness improved greatly. I have way more endurance than before. I also lift weights and... -
Safeway gluten-free stuff isn't cheap here and rarely is it on sale. But I'm used to Save-On Foods so I'm biased. I recently moved back down to southern Alberta and so no more Save-On for me! I guess I'll have to suck it up and go to Sobeys and Safeway again. It's a good thing they have sales where you are.

I guess the Fry's cocoa made in the prairies is fine. I too, have never seen a warning on a can. I've been using Fry's for as long as I can remember. I'm sure glad they are safe here! Thanks for the info. -
It really does suck and you are right xantham is in so many products. This is really a difficult disease/intolerance. I thought years ago that tapioca was causing me problems. Now I have to rethink everything. I need to go buy some guar gum and start baking again. I really hope xantham is the problem too. I getting a little tired of being sick again!

Xanthum gum. Very interesting. Maybe that is the culprit for me. I haven't had problems in years, but for the past few months somethimg is very wrong. I do a lot of baking with xanthum being the common ingredient.

The only soy milk that I know is gluten-free is SILK. Sorry, not too helpful. -

They use separate pitchers for soy or milk in Canada too. I am very sensitive to gluten and I have never been sick from one of their soy latte's either. -

I buy pure vanilla, not the fake stuff. Yes it is a little bit more expensive, but there are no artificial flavours. I use Western Family brand for pure vanilla. I'm out west so I'm not sure if this brand is in the east, but it is an Overwaitea store brand. I tend to stay away from artificial flavours if I can. I just don't trust them. I would suggest... -

Yes Kinninnick is gluten-free and wf and many items are also cf. They are very strict; their staff cannot bring gluteney food for their lunches or snacks. No gluten enters the building. -
