I wouldn't use the spread in the tub in that situation. Just wouldn't be comfortable. But when you think down to it and there is a pristine top still on the other half, you should be fine, but it isn't devoid of risk. There is also the perception problem of people seeing you use the same tub as the bread crumby knives were in and not being taken seriously...

I am just going to throw out the short quick answer here: No, you cannot eat sourdough made with wheat flour if you have celiac disease. You are correct that the sourdough cultures don't feed on the gluten. -

My celiac friend posted on facebook today that in the aldi mailer she got, it had a page full of gluten-free stuff. It is their own brand, says limited time only so limited quantities. -
I watched an episode on Americas Test Kitchen this past weekend and they made a wild rice and mushroom soup. I think you have to register to get recipes on their site but it should be a pretty easy to find recipe in other places.

I buy it regularly and really like it. White rice pasta can overcook, but not as easily as corn pasta, so don't overcook it, and yes it is better with the butter added. I haven't seen those! I would buy them once and enjoy, and then not again cause they are bad for me, haha. -

Ah yes, if you have access to it and want to impress someone with a dessert, whole vanilla beans are the way to go. I haven't come across a vanilla that contained gluten, but I only buy real vanilla so I haven't looked at any of the artificial extracts. Just "White Vinegar" on a label does refer to distilled vinegar. Just as the distillation process with alcohol, the same goes for vinegar. The general rule for substituting flour blends is, if your blend already contains a gum, don't add it. If your blend does not contain a gum, it will always need it added. Pamelas uses guar gum in their blend, so you will want to omit the xanthan gum in the recipe. -

There probably are some doctors that would give a diagnosis if say, a person was already gluten-free with a good record of previous symptoms, and can't tolerate what a gluten challenge does to them, and can't get a biopsy and gluten eating bloodwork. For thriftiness sake, I usually use white corn tortillas in the place of something a gluten eater would use a flour tortilla in, like soft tacos or burritos.
