We're having fajitas for supper. Simple, fast, easy and practically no effort involved. Which I need tonight because I'm already exhausted with a ton of work ahead of me.

 

So my SIL who has forever inhabited the actual downstairs apartment in this house got married and moved out. It has been a slow process because she's disabled and her husband works crazy hours, but finally she's more or less out with just what's left in one room that will remain a storage room for now until the stuff is dealt with. This is amazing news for me. This means that I finally get my very own kitchen!!! :D :D :D The rough part is that I've been cleaning and it's hard. Since she wasn't up and about much, I spent a little over 2 hours cleaning the fridge. I haven't opened the oven yet, but thankfully it is a self cleaning oven so I'm not worried. And... it has a dishwasher not named Addie!!! Oh yeah, I'm pretty excited. I told my husband that we'll let him have a few gluteny things and have a special protocol for him dealing with his poison. But we'll be 95% gluten free. Wooo!!! I'm thinking that I'll maybe be ready for a Tuesday move in. (That's hub's day off, and I need him for the heavy lifting. :lol:)

Spoke too soon.  We are still OK but then had a tornado about an hour south.  It was on the ground for 30 minutes!  Fortunately, its mostly farms.  Nothing much in the KC area - rain, wind, a little hail - just the usual

  I'm thinking that I'll maybe be ready for a Tuesday move in. (That's hub's day off, and I need him for the heavy lifting. :lol:)

 

 

What tortillas do you use for the fajitas?  Or do you?

 

Isn't that what Hubs are for?  Heavy lifting?

Saturday evening I had a small dinner party. I decided I was going to make Indian food. I have only ever made 1 curry in my life. So it was a bit ambitious. My menu was: gluten free naan, chicken tikka masala, tofu tikka masala (vegetarian guest), basmati rice, and Hari's suicide potatoes (recipe from celiac.com). The naan was FABULOUS! I used the new flour blend my friend gave me again (AKulinary Innovations AP flour) and I swear every recipe I have tried it in thus far (3 now) it's been great! I don't think I remembered to take pictures of my naan. But it was so good. I will be making it again. The tikka masala recipe I got from Bon Appetit and it's a keeper too.

I just use corn tortillas for everything I used to use flour tortillas for. I know it isn't what I "should" be doing but it's a hell of a lot cheaper than buying gluten-free flour tortillas that cost $1 each (or more!) and will just crack and fall apart and generally be the worst thing I ever spent money on and leave me eating with a fork. I've had bad experiences twice before Rudi's started making them, and while I've been tempted a few times to try again I just can't bring myself to pay that much for something I really don't believe can be half as good as an actual flour tortilla. So it's corn tortillas for everything here.

omg I almost forgot to share, but I was super excited about telling everyone when I was at the store getting it. So, I stopped at the store to get my chocolate mint and right next to it was a purple plant. I was like, what's that? It was purple basil, which I've never heard of before. So, I got some! It'll go nicely with my purple carrots and purple string beans and red corn. Nothing normal round here. :D I'm not sure why purple basil is special (besides being purple) because I haven't looked it up yet, but I'm pretty excited.

Trade you...I've got 90s headed this way -- fantastic for the beach-goers -- sucks for me.

 

Dinner tonight is Grilled Salmon with Basil Aeoli, Rice and Zucchini (not noodled)

You want my snow? Take it! Someone must have taken it because it cleared up beautifully and will be near 50 today. I think I'll get out in the late afternoon to pot my mint if I'm feeling up to it. I started my day with the kitchen half done already but the stove hood and oven racks staring at me when I walked in this morning. Ugh! At least it's just the racks though, the oven cleans itself. :D My husband got bumped to Wed off instead of tomorrow so I guess that is gonna be my move in day for my kitchen. I'm so excited.

 

Tonight we'll have leftover fajitas. They were so good! I haven't had them in... I don't even know how long. Maybe years. I've gotta have them more often.

Some ovens say to do it with the racks out. I couldn't find instructions for this one so I played it safe. At least they'll be shiny and nice when I'm done. ^_^

Made Ski's suggestion for the crock pot balsamic pork and sweet potato fries. 

 

Not doing well the past 4 days. Serious neck pain.... :unsure: and headaches. erg long story, but through no one's fault, I was glutened at a place I have come to trust. Innocent mistake on the server's part and I forgave her. She was so upset, I felt so bad for her. Anyway, as per usual, when I get hit, my muscles take the brunt of it.

 

 

Anyway, I'll live and I am going to try chili tomorrow and hope for things to improve. 

 

it's in the 90s here and I love it.  B)

I have gotten into using white corn tortillas for everything.  I will use Rudi's only if I am making quesadillas.   Yellow corn for beef enchiladas.  The white corn has a less corn-y flavor to it.

 

So, yesterday I made steak with mini corns on the cob and broccoli/cauliflower/carrot blend.  I also made pamelas baking mix banana nut muffins (on the bag) and accidentally doubled the sugar!  eek.  They were edible still but wooooah sweet.  Also I had a coupon for 2 lbs of free strawberries so I got those and used some yogurt I had laying around and made Strawberry frozen yogurt today.  Still in the freezer but the bite I snuck before putting it in there after churning... it is going to be marvelous.  

 

Today for lunch I wanted to replicate chipotle for myself... made cilantro lime rice, and made some chicken with Stubbs green chile marinade, and black beans.  SO SO SO good.  Not an exact replica but my gosh was that good, leftovers for lunch tomorrow.  Dinner will be oven fried chicken with mashed potatoes and leftover veggies from yesterday.

ugh - i hate that for you :(  i have been gun shy of restaurants (any and all lolz) since october - i almost stopped at one when i was drugged and starving (almost sure that would've been a disaster)  feel better - at least you have awesome heat pads :)

 

made a spiral ham george yesterday, mashed taters & pineapple <counts as a veggie.......?  lolz

 

i live in a geographic anamoly - storms to the left, storms to the right (o snap was that just a tornado warning <_<   )  better get some beers if i'm going to hafta brave the (scary) basement   :o

And yeah, if you're gonna be hiding from tornadoes in the basement beer definitely sounds like a good idea. Always good to have priorities straight. :lol:

 

I saw on my facebook feed today that a local store has Udi's bread on sale for $3.50 and I had a few coupons left for $1.50 off so I ran right over in my cleaning clothes to get some. I'm feeling pretty awesome. B)

Pineapple, is not a veggie, You know this, young lady,  but I'll cut you some slack because the weather situ is scary. Always, always have

booze on hand for basement hiding. The only way I managed to get through the tornado that came through NY that time was the fact that the 2 cats, the dog and J and I were hiding in the room where he kept his homebrew.  ^_^

 

Going with white bean and chicken chili tonight........ In "Karen's crockpot" as I have come to call it.

Glad to hear our Irish is on the mend.....that accidental glutening crap is a pain in the neck  :lol:

Up way too early here...at least I slept better...past several nights this stupid cough keeps me up at night but feel ok during the day...just sound froggy rather than feel froggy ;)

 

Crock pot chili sounds like a stellar idea...another scorched promised for today....oh goodie  :rolleyes:
