Dinner tonight.. may not happen.  Because I just baked a Betty Crockers gluten-free devils food cake mix and I have a tub of icing waiting to go in when it is cool enough.  Hmmm, I guess I will whip up a little bit of real food but I am definitely leaving room for cake!  (By the way for those who wonder why I post my dinners so late- I cook for when hubby gets home from work which can be pretty late)

 

This weekend I am getting a free gluten-free meal at one of my favorite local places, they had a Facebook contest where you comment on a picture and holy guacamole I actually won this time!  So a free entree to the place we were already planning to go to on our Saturday date, can't beat that!

 

nope...can't beat that.....

 

and, um -- cake for dinner is nothing new around here.

I did...I tweaked it a bit -- can't do spinach...well I'm hoping to get it back in moderation soon (actually bought some yesterday) but wasn't ready for a trial so...I subbed with Kale.

 

I think it will be even better with Spinach.

 

Cake -- I said cake -- today's model is chocolate : )

Ate half an Udi's Bagel early this morning and all seems ok :)

 

Until recently I couldn't tolerate any grains -- have been able to eat one slice of canyon bakehouse these past weeks, but failed with udi's last time I tried.

 

Today may be a very good day after all :)

 

edited to add:  the ingredients are the same as Udi's White so may have more bread options again!!!

Yay for being able to eat bread again! Do you buy Canyon Bakehouse locally or order online? My store just discontinued carrying it, so I might have to go the online route.

 

My kids and I are having chickpea and quinoa stew, cooked kale, and apple slices for lunch. I need to find more exciting "naturally gluten-free" recipes to try on occasion. Our diet is very healthy but sometimes I get bored.

Yay for bread and bagels! I have a really awesome bagel recipe that I need to dig out now that you mentioned them. I think they sound like a nice weekend treat.

 

This is my husband's first day off since the middle of last week so today we're having our Easter dinner. It just didn't feel right to have it at 10:30 at night when he gets home. So we'll have ham, stuffing, and whatever veggies I decide to make. I'm pretty excited, I love stuffing. :wub:

Ruth...I buy locally...we have it several places, but recently found a market that sells it for 4.59 compared to 5.99 everywhere else -- used to pay 6.89 for it when it first came out -- the men didn't get it much then.

yeah, that "stuff " is always good on the side.  :lol: I like the looks of that recipe, ski! Yaay for bagel-tolerating. whoohoo!

 

I decided against split pea soup and decided in favor of black bean soup.  

The great thing is, J does not care either way.

He's very easy to cook for--except when it comes to fish. He does not do fish. (shellfish, yes. fish, no.) I would eat fish every day if I could.

not a lamb guy either....and he chokes down spinach. (spinach salad yes, spinach cooked...er, not his thing.)

 

I , on the other hand, eat everything I can--well, everything that likes me back. lol

I am still waiting for a piece of cake please. ^_^

I am going to attempt to bake some doughuts/donuts (sp?) either tonight or tomorrow. I have to run out and buy some pans because I can't wait for the one I ordered from Amazon to get here Saturday. Does anyone have any tried and true favorite recipes?

I make killer, amazing, to die for donuts. But they aren't a recipe. They're a mix. This is one of my favorite baked doughnut recipes. I make it gluten-free by substituting gluten-free flour mix for all the flour and I also make it dairy free. I made up several dozen of them and took them to a fall festival and people really gobbled them up! One kid commented that they tasted better than the regular fried doughnuts.

They have changed the packaging lately.  The Seven Grain no longer has the "San Juan" part of the name.  Some stores might get more once the old packaging is gone.  I get it at many different groceries in the freezer section.  Whole Foods and those kinds of places usually have it. I have even seen it at Target.  It is based in the Denver area, so it may be more available closer to Denver?

I think you might need to switch to a nice white wine to go with those donuts at 6 a.m. Or champagne and OJ?

 

M isn't a big pork fan except occasional bacon or grilled pork chops.  He might like the roast?  Hmmm....  Its cooked in my favorite kitchen appliance.   :lol:

I went to a local Celiac Support group thing.  This lady had made the flat bread with that flour mix you got at Costco.  It is dense and dry - not in a bad way.  Like a pita.  Great with hummus.  Freeze well.  They make lots of things like pizza with it.  Cut them in pieces and you could serve them with hummus and other dips to GEs  (Gluten EAters),

I'm going to try that pork recipe myself this weekend. It's your fault I now own two slow cookers. I actually say "Karen made me buy this bigger one " .

 

Tonight is PIzza night as you all know. Not sure what kind yet.

Roast was AWESOME and everybody loved it -- was nice new flavor -- funny it kinda smelt like I was serving good hot dogs with the works during the first hours of cooking -- J came home and started salivating around 2pm and the smell got much better/richer.  I have to print the recipe...I didn't look at it after I loaded the pot, so not sure if it suggests making gravy out of the juices -- I just added a Tbsp of Tapioca Flour right before we served -- corn starch would work too.

I've got two crocks now too -- the big one I've always used, but added the travel sized one -- I blamed K when the hubs looked cross-eyed at me filling up the appliance graveyard ;)

      Thanks to everybody for your help. I reread the dr's notes from the biopsy procedure and it seems I had worse than atrofied villi. It was termed flattened mucosa. So while iron ferratin levels are normal my bet is, as kitty alluded to, iron not getting into cells. I have dr appointment next mo but don't hold out a lot of hope, There is strong correlation of low red blood cells and insomnia so at least I finally solved that one after few yrs of being mislead. I intend to take stop taking 100 mg b1 at noon time and start 150 mg benfotiamin. I may or may not add the the 100 mg b1evening meal. BTW, last night had 1/3 lb beef. potato then 2 bowls cereal and an apple later in the eve. I generally do my areobics before supper so maybe that contributes to the hunger.

      I have osteoporosis and have crushed three vertebrae.  I supplement with Lysine, Tryptophan, threonine, calcium, Boron, Vitamins D, A, and K, and the B vitamins (folate, B12, and Thiamine B1 especially for bone health).   I tried Fosomax, but it tore up my insides.  I prefer the supplements.  I feel better and my bones feel stronger.   References: A composite protein enriched with threonine, lysine, and tryptophan improves osteoporosis by modulating the composition and metabolism of the gut microbiota https://pubmed.ncbi.nlm.nih.gov/41915427/

      @Aileen Cregan, I was put on high blood pressure medication, too. But I was able to correct my high blood pressure by supplementing with Thiamine Vitamin B 1.  I am no longer on high blood pressure medication.  I feel much better without the medication. I continue to supplement Thiamine in the form Benfotiamine.   The particular high blood pressure medication I took was Norvasc (amlodipine), which causes thiamine deficiency by blocking thiamine transporters so that thiamine cannot enter cells.  Benfotiamine can get into cells by merging with the cell membrane, thus bypassing nonfunctional thiamine transporters.   Indapamide also blocks thiamine transporters! The use of this type of medications that block thiamine precipitated Wernickes Encephalopathy.  My doctors did not recognize the connection to Thiamine deficiency.  I nearly died.   Talk to your doctor and dietician about supplementing with Benfotiamine, a fat soluble form of thiamine that bypasses thiamine transporters.  Ask for an Erythrocyte Transketolace Activity Assay to check your thiamine levels asap.  Routine blood tests for thiamine are not an accurate measure of  thiamine in the body.   Absorption of essential vitamins like Thiamine is altered in Celiac Disease due to damaged villi, inflammation and dysbiosis.  The Gluten Free diet can be lacking in vitamins and minerals.  Discuss supplementing with all the eight B vitamins,  the four fat soluble vitamins and necessary minerals. Please keep us posted on your progress!
