  1. The difference is the use of a single family versus a mass-serving restaurant chain. I would imagine they have found that the average worker has less of a chance to screw the product up when they have a "crisp-enhancer" like flour in use. Remember, these are 16 year old kids doing the frying -- you have to make it easy for the product to be consistent...
  2. Its also important to realize that a number of Celiacs also have "nightshade intolerance", which prohibits another genre of food, including potatoes. I had a friend in San Diego with Celiac and Nightshade Intolerance. Poor girl had even less options than we do... She couldn't do french fries ( although I do think she made sweet potato fries)...

  25. I, like Richard, have never seen a balsamic vinegar that contained gluten (7 years). It is normally derived from grapes. The cheap stuff will have additives - the more expensive (normally the better) will not. Soy sauce is used commonly in salad dressing (even in non-asian restaurants). It is best to ask anyway (or bring your own)
