One other thing I forgot to mention... be sure that you are 100% gluten-free. No cross-contamination. No cheating. With Celiac it is all or nothing. -

I have the same dread/fear! If they don't kill me with gluten they'll kill me with the high-sugar food and "Ensure" type "adult nutrition" drinks. Ever look at the ingredient list in that stuff? Nasty! And the crap they push through a stomach feeding tube is worse. It really should be outlawed. -

I agree that for cross-reactivity to occur that the two antigens - or in the case of Celiac, proteins - must be sufficiently similar to confuse the immune system. It would be much more likely for a reaction to occur with oats, than say coffee or some other food that is even more dissimilar. -

I agree with Bartfull that you should consider being tested for Celiac before going gluten-free. Celiac cannot be diagnosed via a colonoscopy. It entails a bloodtest, usually followed by an endoscopy and biopsy. In my opinion, while it would have been best to get the Celiac test before going gluten-free, if you have the severe reactions you describe I wouldn't do the gluten challenge just to get confirmation. I believe what you're referring to is sour mash whiskey. A bit of spent mash is added to the new batch prior to distillation - is keeps the bacteria levels in check and keeps the ph at an acceptable level so that the yeast can grow. However, it would never be added to the whiskey after the distillation process because it would completely ruin the flavor...
