It does sound to me like there is a high likelihood that they had been contaminated with some source of gluten. However, that aside, that is also a lot of hard-to-digest fat to consume all at one time. Same with the nuts. Have you tried taking a digestive enzyme whenever you consume protein, fats, etc.? -

One week of gluten after being gluten-free for 2 years is not long enough for your body to make enough antibodies for them to show up on the tests. FWIW... I've found that as long as I take a digestive enzyme when I eat nuts and make sure I chew them very, very well they don't bother me and they don't sit in my stomach waiting to be digested. I also don't see undigested pieces of them in the toilet... I eat 1/2 cup of nuts every day (with a few M&Ms mixed in for fun ) -

I've always been cold... cold feet especially. I've only been gluten-free for about 3 1/2 months but I've noticed that I don't get bothered as much by the cold and it doesn't seem to take me as long to warm up once I come inside from being out in the cold. My night sweats have eased up too. -

Doctors can be really clueless and extremely frustrating. From what you describe it sure as heck sounds like you either have Celiac or non-Celiac-gluten-intollerance. Either way, if it were me I would go 100% gluten-free (not just wheat free as that one doc suggested) and see if the symptoms go away. I work out a lot and so end up taking 2 showers a day quite often - which was drying out my hair and sometimes making my scalp itchy. I found that baby shampoo worked well - sometimes I only wash with "adult" shampoo every couple of days. Although, even with the baby shampoo I still use conditioner.

I requested the blood test because Celiac is in my family and I was getting routine blood work done anyhow so I figured I'd ask to have that one thrown in too - fully expecting it to be negative. As far as when to retest, my doctor wants to redo my blood work at 6 months. I remember reading that the antibodies have a half-life of approx. 3 to 4 months.
