DH can take quite a while to clear up, because it's caused by deposits under the skin. Making sure to stay away from *all* gluten (including those pesky hidden sources and cross contamination) permanently, and drastically limiting iodine (an element in the reaction that forms the deposits) until it heals, is about all you can do.

Well, here in WA, a liquor store cannot buy from a manufacturer. It must go through a state approved distributor, and the distributor decides what liquors it will 'supply'. This is a good point. Despite the fact that my husband dislikes most gluten-free baked goods (I've found a pancake mix he'll eat with me and a muffin recipe ;-) ), and despite the fact that we have friends over for lunch or dinner _often_, I NEVER cook with gluten. It varies from individual to individual. For me, it was a week or two. For others, it may take longer. Do know, however, that by going back and forth on taking gluten out of your diet, you risk getting false negatives if you go pursue blood testing. -

They've known it was only a short section of the gluten protein for a while (though the study I read two years ago only had it identified down to a 33-mer), but going to GMO wheat has its own repercussions. -

I think I saw a jam at Trader Joe's that didn't have pectin - just sugar. :-/ If nothing else, you could cook down the fruit, adding sugar, for something similar. Depends on who ya ask! ;-) These seem to vary by person, whether you like them or not. I like the chocolate coconut, apple pie, and ginger snap flavors. I distinctly dislike the cherry pie flavor, and am pretty ambivalent on the cashew cookie and banana flavors. If they're available, I'd pick up Clif Nectar bars over these, myself. Or Ruth's Flax bars... -
