    ARCHIVED Seasonings

Imagine brand broths are Gluten-free Casein-free. I use all sorts of spices in my cooking.... what are you looking for that you can't find?
  2. Dried fruit! Particularly Trader Joe's dried mango. Dear me, that stuff is addictive. Tea with honey in it works well for me also. Fresh fruit also, of course. :-)
  3. I agree that what you describe is more typical of an allergy than an intolerance, and your doctor can confirm that by doing an allergy test (different from the celiac test he ran). I would encourage that test too, since what you describe is fairly severe, and if his reactions could turn anaphylactic, you'll need to carry an epi-pen at all times. If he...
  4. lactose is milk sugar, casein is milk protein. yes, you can have problems with either one and not the other, or both, or neither. additionally, just as is true with wheat, you can be intolerant or allergic to casein, or both (or neither). the vast majority of peple in the world have some degree of lactose intolerance, because the body's production of...
  5. It sounds fairly classic of lactose intolerance. Enteropathy causes by dairy is rather rare, so I wouldn't worry about damage so much as symptoms. Does lactaid help at all?
  6. The dietary challenge (getting worse when you go on gluten, getting better when you go off) IS a valid test in and of itself. Listen to your body! :-)
  7. If you can use an insulated lunch box and put a small ice pack in it, there's all sorts of things he can take - and there were already a lot of good suggestions. A couple more I have: shrimp/chicken/tuna salad cold soups nuts fruit raw veggies avocado slices
  8. Yep, that's about the only low-carb, higher protein cold cereal that's gluten-free. (Though I definitely disliked them... Threw out the box, 'cause I just couldn't take the cardboard taste. ;-) ) That's one of the reasons I've switch to hot cereals (a combination of, say, millet grits and rice bran made with soy milk is fairly well balanced, though I don...
  9. I know a lot of you have noted that it can be tough to eat gluten-free on a tight schedule, so I thought I'd share one of my scrounge night new favorites. It's adaptable, and balanced, and can be made and eaten in 15 minutes, getting only a plate and a bowl and a fork dirty. Tuna Tacos 1 can tuna fish, drained 1/2 avocado, or 2 tbsp sour cream or sour...
  10. They have a list somewhere... The Soy Crisps are gluten-free.
  11. Some things I often have that have a decent amount of fiber: 1 svng baby carrots (40cal) - 2g 1 small bell pepper (30cal) - 2g 1 cup cauliflower (25cal) - 2.5g 1/3 med onion (40cal) - 1.5g 1 small banana (90cal) - 2.5g 1 mango (135cal) - 3.5g 1 med pear (100cal) - 5g 1/2 cup blackberries (30cal) - 4g 1/2 cup kidney beans (110cal) - 8g 1/2 cup...
  12. If you've mainly been eating veggies, fruit, and rice, you may not be getting enough fat or protein to keep your blood sugar stable - which would cause recurring hunger. Does it help if you have things that have more fat/protein (some meat, nuts, maybe a fair amount of peanut butter on an apple, some avocado, etc...)
  13. I don't believe they generally use flour (though they may use a small amount of talc). Do you ever get a reaction from bandaids or latex gloves? What you describe sounds like it could be related to a latex allergy if they were latex ballons.
  14. You can keep him gluten-free. If it makes him feel better, that's what really matters. I know a doctor-written diagnosis might make you feel better, but trust your instincts! :-) You've seen him get better, so go with that. It leaves you room to try gluten again in the future if you're not certain, but it's a choice you'll have to make (or he will have...
  15. I agree with richard - I'm 5'2", and was a 12/13/14 in college. Until senior year when I started exercising and reducing portion size (slowly!), and am now a 4ish. Exercise is a must! Try not to be hard on yourself when you do backslide a bit - it's going to happen every now and then. Just pick yourself up and start again.
  16. Actually, the reaction you describe to alcohol (the turning red) is not that uncommon. (I believe it is more common in those of Asian decent, but I could be wrong about that.) There's nothing in particular to do about it - I believe it is a variety of allergy, essentially - other than avoiding alcohol. (Some drinks may cause worse reactions than others...
  17. I would encourage, until you have this well in hand, that you simply do not eat out. When traveling, bring food with you, and stop by local grocery stores for produce, but don't trust anyone else to make food for you for now. I'm sorry I don't have a lot of other advice - other than making sure that you're not getting contaminated foods. (Avoid packaged...
  18. Are you looking for truely low-carb or just moderate carbs? (Would you say more Atkins-like or more Zone-like, if you had to go by marketed diet names?) If the later, there's a lot you can do - pick the lower carb, higher fat/protein flours and decrease sugar. Bean flours, and quinoa, amaranth, and buckwheat are all higher in protein and fiber and lower...
  19. It is also possible, but rare, for atrophy to occur due to dairy. You might consider taking that out of the diet as well. But I agree that there may well be other complicating factors not relating to celiac.
  20. There is - apparently - a difference in how Kraft handles their items in Canada versus the US. There is a list for Canada, the general policy for labeling in the US. So, if you're in Canada, go by the list. If you're in the US, go by the label. (Even if they're different - sometimes the product formulations ARE different.)
  21. There was a study that showed McCann's to be contaminated as well. Given the other studies showing that a non-trivial percentage (something like 20%?) of celiacs DO appear to produce antibodies to avenin, I don't even bother trying the stuff...
  22. My husband hates most vegetables, but has decided he likes them in a spicy stir fry. Ok, only a few vegetables, but still...
  23. If she's celiac, she can't have gluten - period. It can be a difficult change to make - it's certainly a big one - but there are plenty of ways of making it easier. The easiest way to start - in my opinion, and it's really just an opinion - is to keep out of the processed, pre-packaged foods. They have the additives and ingredients that are questionable...
  24. I don't know about all that coming from just lactose intolerance, but - depending on how fast you heal and how long you had been gluten-free and how much antibodies you produce and how the labs read the tests - 21 days gluten-free might have been long enough for you to end up testing negative. You might try to find out what your actual values were.
