I think it's really a decent analogy (to a point). It breaks down in the effects of getting a lot of it (rat poison kills you now, gluten kills you later), but the basic premise that a very small amount can make you very sick is still true. -

I don't do a lot of baking, but tend to follow regular recipes with gluten-free flour substituted (particularly a combo of sorgum, millet, and brown rice). You may still want to try playing around with the composition of your food. What you describe would leave me quite hungry - both from not having enough fat/protein and (unless you're eating a big huge serving each time) not enough food (and I don't eat *that* much ). Yeah, if you've been getting even a very small amount of gluten, you can't expect to have your symptoms go away. If you've seen improvement (without symptoms going away), then I'd be fairly confident that it's celiac. What are you eating throughout the day. A bag of kettlecorn isn't a great idea - sure it's a lot of calories, but it's mostly easily digested carbs. you're going to have a blood sugar crash that just leaves you staving again very shortly after eating it. Are many of your other meals/snacks much higher in carbs/sugar than protein/fat? -

You had a positive IgG and two negative IgA results. But without a total IgA result, you can't really say anything about the results. It's indicative that you've got *some* issue with gluten, but celiac or not - they didn't run all the tests they needed to. -
some FSA's allow gluten-free specialty food as an expense, but some don't. there is a tax deduction for officially dx'ed celiacs, but it only kicks in if you are itemizing your deductions and the medical expenditures are at least 7% of your income.

for me, about a week. Doesn't stop me from working (either previously, when I was a software engineer, or now, when I just teach yoga), but not only are my symptoms not as severe as many other people's, but I've worked through migraines and many other painful things, so I tend to just deal (not saying exactly how well ) with the pain/discomfort. -

well, he's "right" when he says celiac is rare, but only in comparison to common things like how many people are likely to get a cold during cold season. :/ The rate of celiac disease incidence in the population is 1%. 1 in 133 is the last study I've read, but the numbers seem to vary somewhere between a tiny bit over 1% and a tiny bit under. -

It kinda sounds like you know what to do, but are not CONFIDENT. Be confident that something isn't right when you don't feel well. The exact symptoms may not always be the same, but if you eat gluten and then feel worse, that's a pretty strong sign! I managed to avoid the gluten (I'm always careful and conservative, but even more so while I've been pregnant), but I'm feeling more stuffed than an overeater after a huge Thanksgiving meal. Baby girl is welcome to come down (and then out) any day now.

Oh sure - a good thick-crust pizza, a fresh out of the oven cinnamon roll (no, gluten free is not the same), or a freshly baked sourdough with butter.
