The only other person brave enough to have the blood test in my family is my sister and that test is negative. The brothers are too chicken.

I know a pretty even selection of men and women with Celiac. Although you hear of women having it more. I agree why you hear of more women having it is because (I know this from experience with brothers and such) that, many men are chicken about going to the doctor.
They are afraid the doctor may want them to take their clothes off and inspect things.

I have found after being gluten-free for a month and a half that; if I eat anything sweet... like chocolate that, it is too sweet. I used to be able to eat a ton of chocolate before and not feel sick. Now it takes a couple of pieces and I have had more than enough. I feel like I am going to vomit.
Has anyone else had this since being gluten-free?

I have Hashimoto's Hypothyroidism. When they discovered the nodules because I hounded the doctor to do an ultrasound and then the nodules were growing and I was starting to choke when I ate 4 specialists turned me down to see me. They wanted them to be bigger then they would operate and remove them. I went to the doctor who is signing the Rev. Canada papers for me and he gave me Synthroid. Now, the Synthroid has shrunk the nodules, I have to remain on the Synthroid or they will probably come back because I have 3.5 times the antibodies any normal person should have for thyroid.
The other jerk doctors just wanted to let them get bigger and operate instead of trying to shrink them.
Silver_Naki, I don't think the majority of doctors ever think, it certainly seems like that around here.

My hands would swell so bad that I could not bend my fingers or pick up the telephone. I had to use both hands to pick up the phone. It hadn't occured to me, until it was mentioned, but my hands have rarely swelled up in the morning since being gluten-free. I will wait and see what happens when the weather gets really cold.

Ursula... your husband is a donut head. He is like the doctors, he just doesn't get it. I want to smack people over the head when they are so dense and stupid. The reason I don't,is because I know with their hollow heads that would probably cave their heads in. I know you wish he would have to live through what you are living through. There are so many who need to live through things, that way it makes them more tolerant.
At one point in my life I almost ended up in a wheelchair. Out of pure stubborness I was not going to let that happen. I live with 24 hour a day pain, there are some things I can't do anymore but I don't let it stand in the way of anything else and sitting cross-legged is not that important to me. The whole thing is it showed me a world I did not know and I became very vocal about things that were not handicapped accessible. I know at any moment that things you are used to doing can be snatched away from you.
Unfortunately some people need to be more tolerant of many things. The last safe prejudice in the world, is to have one against someone of size. Therefore, those who think we are faking this or poo pooing it need to have a taste of it, some people go through life far too easy. Then there are others who get more than their share of things they should not have. I think
sometimes it is given to those people because, the universe knows they are more compassionate and can adjust and handle these things.

Coconut Macaroons
2 egg whites
1/2 tsp flavorganics vanilla
2/3 cup sugar
1 1/3 cup bakers coconut
1) Beat egg whites and vanilla till soft peaks form. Gradually add sugar, about 1 tbsp. at a time, beating till stiff peaks form. Fold in coconut.
2) Drop mixture by rounded tsp. 2 inches apart. Bake in 325 degree oven about 20 minutes, or till edges are lightly browned. Transfer to wire rack to let cool.
Makes about 30 cookies
(note: these are very fragile and crumbly, but extremely melt in your mouth yummy and addictive!)
I used to make ones that were similar only with coco, coconut, vanilla, sugar,butter, milk, raisins or walnuts, and rolled oats. I always used the raisins. I sure do miss them as no longer can the rolled oats be put in them.

Even BC I would have never ate a pizza that looked like that and it had pepperoni on it which is also a no no in my world.
Perhaps the pizza was trying to get away. I would think someone made it out of paper mache.

As I am allergic to multiple things, I had to make sure that there is no perfumes in my laundry detergent. Also having latex allergies and other things I have to be careful off. But most of my itching guit below sea level when I went gluten-free.

Ursula-- You are so right. I would sit and look at my size 6 leather clothes and cry because I couldn't wear them. I hated people calling me a "fat cow" and worse, idiot doctors saying, "you need to lose weight" but were too stupid to find out what was wrong. I rarely go out except to work or friends places because I hate being in public and the added weight caused huge foot problems. I am hoping that I will lose another 20 lbs before I leave for Jamaica. I fear I may run into a shark there that will think I am a fat juicy seal.
It is unfortunate that happend to your mother but I think we can thank the medical profession once again for their apathetic attitude.
Water drinking,
The only reason I go through that much water is because the place I work in is very dry and we talk all day long on the phone or microphones so it does strain the vocal cords. It doesn't stress my kidneys like the coke did. When I am not at work, I really don't drink more than a gallon of water.

I have read this many times. It seems to me what she is saying is that she wants to be lactose and gluten intolerant because she wants to be able to say she is and get special treatment. By her saying 'how much longer do we have to put up with the gluten crap', sounds like she is saying she is tired of hearing it . It keeps sounding to me like she is indicating that we have a choice, like being Vegan.

I have had my Synthroid dropped by 50 micrograms since going gluten-free.

Actually during the last seven years was when my weight would go up and no matter what I did, I couldn't lose it. I had lost 12 pounds in two weeks and when I had to go back on gluten for a week I gained it all back and some. Now after being gluten-free for six weeks, I am now 28 pounds lighter and this was with eating three chocolate bars due to stress the other day. I drink more than 3 gallons of water a day and have one glass of orange juice each day. I hope to be down another 20 lbs by March 4.
Never in my life did I think I would long to get into a size 16 and now I do. I went from 130 lbs 7 years ago to 280 lbs till Nov. 28/05 and I am only 5'4".

Obviously that ditz thinks this a fad diet and we are all trying to be part of the "in" crowd. She is only demonstrating how ignorant she really is and how self-centered. As she is such a princess she doesn't want to put up with "this gluten crap."
She should try it from our end of the fence.

I have lost about 25 lbs since going gluten-free at the end of November. Everytime I even get a slight accidental glutening my weight stands still for at least two weeks. I accidentally got glutened at work 2 days ago (some crumbs on a desk).

This recipe was given to me by a Thai girl at work.
You cut in small pieces and fry up chicken breast is a little bit of olive or peanut oil. Take chicken out and fry up green onion, peas or brocolli, egg fy and then and cooked rice. Add a small amount of gluten-free fish sauce and gluten-free tamari or soy sauce, fry them all together and add the fried chicken breast and then serve.
Delicious.

In 2001 and 2002 Celiac disease was considered a disability and you could have an additional deduction. This is the last year you can claim that deduction which could net you up to a $3000. refund. You have to have the disability form filled out and after talking to Revenue Canada I can claim back to 2001 and 2002 because Celiac disease was probably something I have had at least for 30 years. Now for the rest of the years from 2003 they took it off the disability list but now with an additional note from the doctor you can claim your Celiac food such as breads and flours as a medical expense.
They considered it a disability before because of the time it took to travel to and and procure special ingredients to make our food and the expense. For some assinine reason the government thinks that we don't have to pay more, travel more or take time to make our food. With the bread you compare a loaf of gluten-free bread against a regular loaf of bread, you must have receipts to submit if asked. e.g. regualr loaf $2.00, gluten-free loaf $6.50= claiming $4.50.

I love my Bette Hagman books, but I have many wheat/gluten-free cook books and I adapt recipes from my non gluten-free cookbooks also.

I imagine the juice would go faster in to the blood stream. Eating the vegetables they would take longer to digest but I think both ways are good and if you prefer the juice then I would go with that. I do fruit and I like to make smoothies and eat the fruit. The best of both worlds in my opinion.

I truly don't consider them a pleasant reminder because, mine comes out on my face under my nose, corners of my mouth and below my bottom lip. It makes a mess out of my face. I feel like a leper, but certainly know when the smallest grain of wheat.

I make my smoothies with wheat/gluten free dessert or flavored tofus, orange juice or other juices, fresh fruit and some water and ice. It is like having a giant slurpee that is really great. Some days, that is all I have all day.

Before my diagnosis that was my life for 30 years and each year was worse than the one before. If I ate anything with gluten in it I had to be at the bathroom within ten minutes or else. If I at any after 12 noon then it was a big problem. Big time pains and sweating were the norm. Now since being gluten-free I only get that when I am glutened by accident.

You are far from alone, as I am a rapid cycler. I wonder just how many bipolars have celiac and vice versa. I have had to learn to control my bipolar without meds as my sensitivity to meds made it impossible to use them. I have noticed since being gluten-free that my hair trigger temper isn't as bad.

There are days I think about pizza, or cake or some other wheat substance. Then I remember the pain, the dh and the big D and there is no way I would intentionally go off the diet.

I used to have yeast infections constantly before the Hysterectomy. The Gyn told me he figured I was allergic to the yeast in my own body, that was when I was 21. when I had the hysterectomy for the yeast infections stopped but the itching never did. The itching never stopped until I wengt gluten-free.
Forgot to mention, if I get accidently glutened it starts itching all over again.
