  9. I need a good enchilada recipe....anyone know one? I am thinking cheese, corn, black beans, chopped onion, rice, all rolled up in a corn tortilla, and then some salsa on the outside....but I don't know if you need to let it sit for a while so the corn tortilla gets soft (soaks up the juice) or what kinda salsa is good to use. Ok, so I had a little incident tonight (see the post about rude people and notes on cars) and I was glutened last night by a chip at a resturaunt....and I am really feeling the effects....but now I am wondering if the glutening could be adding to the emotional rollercoster I am going through.   21. Ditto....and I add that if you talk to a manager and let them know your concerns, they MAY be kind and willing to make sure that things are as safe as can be......but that is a maybe. Not all of them are like that. I have had GREAT experiences, and HORRIBLE ones. It is a crap-shoot. I understand the fear though.
  22. Sparkles, I totally agree with the above points by Jnkmnky. I have tried IT ALL and I am now a wonderful 265 lbs (sarcastic on the "wonderful" part). The bottom line is this, burn more calories than you take in. That might mean eating fewer calories, or burning more. Having problems with foods just means that we have to run our food through a "filter" before...
  23. I know for me, it was 24-36 hours.....I have a pretty reactive stomach. If I eat something with gluten in it, I am sick within 45 min or less....and when I am better, it is pretty fast for me.
  24. I get night sweats or hot flashes (and not always at night, but usually at home in a "rest" mode) and only when glutened....maybe a connection? I got *something* gluten-y last night at dinner and was up at 3 am burning up and sick to my stomach. I don't know, just wanted to throw that out there.
  25. Just a thought....because I got sick when I *knew* I shouldn't....are you sure it was a gluten reaction, and not a reaction to bad lettuce or a stomach bug? Maybe you got the brain fog or some other symptom that you KNOW has to do with gluten, but I just want to pose that question. I am so quick to blame gluten, but I think I actually got sick from bad lettuce...
