I really do wonder about tuna. For a long time I've had this vague sense that I don't feel real great after eating it....this is true of other fish too. I've never been a fish lover, and can go months and months without eating (or missing) it. What are the "amines" you mentioned? I haven't heard this before. -

Well, doctors have really just skimmed the surface of knowledge about celiac disease. While most identified celiacs have DQ2 or 8, not all do. There are other unknown factors at work. With identical twins, who would have the same DNA, there are cases where one twin has celiac disease and the other doesn't. So there are definitely other factors involved... -

I just picked up this free publication from my health food store...many stores get it....called "Better Nutrition", the March issue. On pages 54 & 55 is a "gluten free resource guide. One page of information (pretty good) and a 2nd page of new and interesting products.

This is a good piece written by a celiac who even after being 100% gluten free still felt bad from time to time. He discovered he had other allergies which were probably made worse by being a celiac. Open Original Shared Link

The mayo was Trader Joe's organic, which lists "white vinegar." Their other mayo (not organic) specifically says "apple cider vinegar" so it's safe. Meanwhile, I am thinking it could possibly be the onions....I really love them, but still, yesterday I was out and had a burger (no bun of course) and I put a ton of raw onion on it and no problem at all... -

Two things stand out for me. First, is the ingredient "vinegar". My mom, who was diagnosed celiac 40 years ago, says she never eats anything with vinegar unless the exact source of the vinegar is lableled, such as "apple cider vinegar." So if you just see "vinegar", the source material is hidden. I myself got very sick the other night on a tuna salad... -

Well, I'm better today. I don't believe it was any sort of stomach bug, though. I've had this pain after eating many many times over the years, and it's horrible. However, it doesn't happen real frequently, thank goodness. A burning stabbing gnawing pain in my upper stomach, no comfortable position to get in. Plus last night I felt really nauseated... -

I made tuna salad last night (mayo, celery, onion, olives) and also had some cooked cabbage. Within an hour I had this horrible gnawing pain in my stomach, and then later started feeling really nauseated. It was like a gluten reaction I get sometimes. What could I have reacted to? Just a week ago I had corned beef and cabbage, no problem with the cabbage... -
It's purely amazing how resistant people are to information. The bottom line is no one wants to give up wheat.....everyone is a wheat addict...really! They find it hard to believe because wheat is in everything, bread is advertised as such an important part of our diet, look at the food pyramid! My mom has celiac disease, and I have 3 siblings...

What specifically made you wonder if you might have celiac disease? Keep in mind that the majority of people with celiac disease are what is called "silent celiac". Meaning no observable symptoms, certainly no digestive issues. You just may be in this group. -

Well, you could go through the often lengthy misery of doctor after doctor, test after test, etc., and then if they decide you have celiac disease they will tell you: EAT GLUTEN FREE!!! Unless something has radically changed lately for the worse, if things are just miserable like they always have been, you could avoid the above scenario and just go gluten... -

I am starting to think you can have gluten intolerance for quite a long time (decades perhaps) before actual celiac disease gets triggered (assuming you have the celiac gene, of course). You can probably have some degree of celiac disease for a long time before the damage gets bad enough to allow the antibodies to leak thru your gut and get into the blood... -

By the way, if a doctor says you can cheat I'd ask him where he learned that little bit of info...which study, which doctor etc. said it....you'll find he won't be able to tell you that. It's always very well worth checking out other possibilities REASONABLY, because everything is not always caused by celiac disease/gluten. However, don't let your search turn into years and years and an eldless supply of drugs to cure the symptoms (but not the underlying cause!!).
