  3. What you mention really is the crux of the issue to me. I'm 56, I ate gluten my whole life until 2 months ago. I tested with both a celiac and a gluten sensitivity gene, but having those genes doesn't necessarily mean I have celiac disease. I tested positive on the antibody test, but the malabsorption test was a low figure within the normally expected...
  4. I just reviewed by Atkins book for the basics of induction (the purpose of this is to convert your body from a carbohydrate based metabolism and jump start it to a fat mobilizing one).   5. After doing the induction phase for awhile (supposed to be 2 weeks), I think the only thing I'll add in will be the fruit...probably berries. I'm curious at this point about exactly what causes my digestive distress. I know for a fact it's virtually ALL grains including rice, all starches, probably sugar too that mess me up.     This has really made me realize that I have to read every single label for every single thing looking for gluten or casein. Things have so many ingredients these days. That's why the Lara bars were such a happy find...just a few ingredients and all natural! I guess the more ingredients things have the worse they probably are for you!
  8. I get just as sick with eating any casein as I do with gluten, maybe more noticeably so. Like you, I find the casein enormously hard to avoid. I didn't test positive to soy, but I tried some soy milk and it really made me sick so I avoid it too.
  9. There's a lot of frustration here that you haven't tuned into. I doubt if anyone here lumps all doctors into the same category. I myself have a perfectly wonderful doctor who told me right off that I knew more about celiac disease than he did. And I guess he didn't have time to research it since he's a GP and I would have needed a specialist like a gastroenterologist...
  10. When I was in Whole Foods the other day I saw this magazine on their newsrack by the checkout...title was "Alternative Medicine", and it has a big 6 page article about celiac disease! This is the April issue. It's an interesting magazine I hadn't seen before, and the article is good and informative. I guess this isn't a particularly mainstream magazine...

I think they might have had other waffle flavors, but I only got this one. Very mild banana flavor, but great texture and toasted up great!   14. I'm very pleased with 2 Kinnikinnick breads I've tried...the Italian White Tapioca Rice Bread and the Brown Sandwich bread are both wonderful toasted. I keep them frozen, then when ready to toast I nuke a slice in the microwave for about 20 seconds, then toast it. I haven't tried to eat them just thawed out....but they seem nice and soft and not falling...

Well, in my view this technique might address this immediate situation they mentioned of External Pathogenic Factors which can take hold if you have a compromised immune system such as might exist with celiac disease. And perhaps this technique could elimiante that part of things. HOWEVER....as I once saw celiac described, it is the ONE and ONLY autoimmune...
  20. I think with celiac you always have to look for additional sensitivites, which seem to vary from person to person. A lot of celiacs have trouble with dairy and soy as well. For myself, I tested sensitive to gluten and casein. Soy was negative, yet I definitely have trouble with it for whatever reason so a test doesn't tell yo everything. I've also discovered...
  21. I think for me the worst is the horrible burning pain I get sometimes (but not all the time!!). I'm in such pain all I can do for HOURS is lay down with a hot water bottle on my stomach area. I guess what's annoying is just the bloated, sick feeling followed sometimes by nausea and always by near D. And it's horrible if it hits later on when I'm not expecting...

If you have to be eating the equivalent of 6 slices of bread a day to show up positive on a gluten blood test, I probably would have been negative for a couple of years, because I NEVER had that much ona daily basis. I'd suggest at the very least getting the gene test from Enterolab ($149), or if you want a more definitive answer, do the full gluten sensitivity...
  23. \ Dani.....I do my hamburgers on a small George Foreman grill....you don't put any grease at all on the grill, and any fat from the burger drips off. I also buy ground sirloin because the fat content is much much lower. Doing the patty this way doesn't bother me, but frying it would.
